MEXICAN FISH TACOS WITH AVOCADO AND JALAPEÑO SAUCE

Tacos are always a hit at my house and this delicious avocado sauce pulls everything together. Sometimes I make it to serve with taco chips as a fabulous dip.
1 large avocado⅓ cup packed coriander leaves, roughly chopped, plus extra to serve¼ cup sliced jalapeños in brine, drained1 tablespoon jalapeño brine2 tablespoons lime or lemon juice2 cloves garlic, crushedsea salt700 grams fish fillets¼ cup purchased Mexican spice mixolive oil for cooking
