TERIYAKI CHICKEN NOODLE SALAD

2 00g packet Pad Thai rice noodles
500g chicken breast fillets
4 green spring onions, thinly sliced diagonally
2 carrots, coarsely grated
1 bunch baby bok choy, trimmed, shredded
1 cup fresh coriander leaves
DRESSING
¼ cup teriyaki sauce
1 tblsp lemongrass paste
1 tblsp vegetable oil
1 tblsp lime juice
1 clove garlic, crushed
1 Cook noodles according to the packet directions. Drain. Rinse under cold water.
