Honey-mustard chicken
SERVES 4 PREP 5 mins COOK 30 mins EASY
2 tbsp honey
2 tbsp Dijon or wholegrain mustard
4 tbsp olive oil
800g new potatoes, cut into 1cm slices
500g chicken breasts, cut in half lengthways
1 bunch of spring onions (around 7), trimmed and cut into 4cm lengths
Heat the oven to 220C/200C fan/gas 8. Mix the honey and mustard with 2 tbsp of the olive oil in a small bowl until
