Lemon and blueberry drizzle cake
Lemon cake is always a winner and this one has the addition of juicy blueberries and two zingy drizzles.
Serves 12 • Ready in 55 mins
175g butter, softened
175g caster sugar
3 medium free-range eggs
200g self-raising flour
Zest of 1 lemon
115g natural yogurt
150g blueberries tossed in 1tbsp
flour, plus extra to serve
For the lemon syrup:
50g caster sugar
4tbsp lemon juice
For the icing:
125g icing sugar
Lemon juice
You will need:
20cm round cake tin, greased and the base lined
