NOW TO skin the carcass. If you intend making your biltong at home, which could mean the carcass hangs in camp a day or so, it is best to leave the skin on, as this prevents flies laying eggs in the flesh. This will, however, render the skin worthless for tanning except perhaps as bare leather.

The head can now be severed completely by extending the throat-cut all the way round behind the ears and proceeding as described earlier.
Extend the abdominal cut rearwards, between the hind legs, over the anus and along the tail. Then turn around and extend the cut in the opposite direction, over the brisket and along the throat, right to the severed end of the neck. Now ring each foreleg just above the knee, and run cuts from these
