SHORTCUT DINNERS!

GREEK MEATBALL BAKE

SERVES 4 PREP 20 MINS COOK 25 MINS

600g frozen potato fries
400g pkt beef meatballs
1 large zucchini, cut into chunks
2 tbsp olive oil
250g cherry truss tomatoes
100g feta, crumbled
lemon wedges, oregano sprigs, pita bread pockets, tzatziki, to serve

1 Preheat oven to 180°C.

2 Spread fries in a single layer on a large roasting pan. Bake following packet directions.

3 Meanwhile, in a baking dish lined with baking paper, toss meatballs and zucchini with half the oil. Season to taste. Bake 15 mins. Add tomatoes and scatter feta over. Drizzle with remaining oil.

4 Bake a further 5-10 mins until meatballs are cooked through and vegetables are tender.

5 Serve meatballs scattered with oregano. Accompany with fries, lemon wedges, pita pockets and tzatziki.
