PurposeCombining sensory evaluations and hypothetical valuation mechanisms, this study aims to in... more PurposeCombining sensory evaluations and hypothetical valuation mechanisms, this study aims to investigate the impact of consumers' product sensory attributes on willingness to pay (WTP) and overall liking for a new apple cultivar.Design/methodology/approachA sample of non-expert participants (n = 122) evaluated the overall liking and just-about-right (JAR) attributes. A variable transformation approach was applied to make linear and interval regression models between the JAR attributes, overall liking scores and participants' WTP.FindingsThe study reveals the high consumer appreciation for the new apple in both hedonic and economic terms. After controlling the anchoring effect's bias, the predicted mean WTP for the new apple cultivar was €3.26 per kilogramme. We model the opportunities provided by organic agriculture in the Emilia-Romagna region (Italy) i... more We model the opportunities provided by organic agriculture in the Emilia-Romagna region (Italy) in order to mitigate emissions of greenhouse gases in the atmosphere. The sources of farm-based emissions are identified and compared with a recent work by Schneider et al (2007). A distinction is made between direct and indirect sources of emissions and besides carbon dioxide two other gases are examined, which are relevant in agriculture, namely methane (CH4) and nitrous oxide (N2O). A linear programming model based on a set of equations that allows identifying the optimal rotation among those available in the Emilia-Romagna region is run for a representative farm, thus quantifying the amount of carbon which can be stored permanently in that farm under different scenarios. Finally, suggestions are given for the design of public policies that aim to reward low inputs systems, for which organic agriculture can be considered as a prototype. Results of the compared simulations show that the alleged benefits of organic agriculture in terms of less emissions and more sequestration basically hold but they can be conditional upon using the same cropping pattern for the two systems and under certain conditions the consideration of labour inputs can make conventional systems more efficient

These food products provide individuals with a new opportunity to fight criminal organisations on the marketplace. The purpose of this study is to explore how people react to a social marketing initiative devoted to promoting food “buycotting” to counteract mafia-type organisations in Italy.Design/methodology/approachThe data were obtained from a convenience sample of 339 Italians, and the study adopted a model inspired by the general theory of marketing ethics. First, the identification at the regional level (NUTS 2) of land use patterns common to similar farms defined ‘group cropping scheme'. Second, the farm-level construction of farm cropping schemes, which expand the observed crop mix and identify suitable variation ranges considering the farm production context. The schemes are based on the observed behaviour of homogeneous farms and capture their common structural characteristics regarding land use.The schemes can be used at the territorial scale to analyse landuse trends and patterns over time. At the farm level, the method is designed to analyse short-term adaptations and is suitable to be used, together with other data, in mathematical programming models to run policy analysis exercises. Purpose This paper aims to examine the effect of a food-inspired multimedia intervention on child... more Purpose This paper aims to examine the effect of a food-inspired multimedia intervention on children’s fruits and vegetables (F&V) consumption in a real-life setting during lunch. Design Children in an elementary school in Bologna (Italy) in third, fourth and fifth grade, aged between 9 and 12 years old, were examined (N = 171). Two different types of messages (generic and specific) were used to test message-tailoring in two separate intervention groups and one control group. The two intervention groups (classes) were presented with multimedia messages during an English lesson before lunchtime, and their eating behavior during lunch at school was observed. All children were served the first and second course, vegetables and fruit during lunchtime. Data was analyzed with R 3.4.2. The study investigates motivations to drink craft beers in a sample of Czech and International university students in Prague (Czech Republic). Design/methodology/approach - Adopting a revised model of the Theory of Planned Behavior, a simultaneous equations model was used by performing a 3-stage least squares (3SLS) regression. The data were obtained from three hundred and five students aged between 18 and 35 (152 Czechs and 153 Internationals) at the Czech University of Life Sciences (CULS), who completed a face-to-face interview using a questionnaire. Findings - The findings confirm the major role played by self-identity on the intention to drink craft beers, in the whole sample, and the key role played by the perception of being able to drink, for the Czechs participants only. Sharing information about food through Twitter contributes to the evolution of food cultures, acc... more Sharing information about food through Twitter contributes to the evolution of food cultures, accelerating the exchange of information and knowledge about food. The aim of this study is to describe the type of information regarding food shared on Twitter and what kind of network is established between Twitter users in those cases when the #food in question is associated to a geographical area (#Tuscany or #Sicily). Using two different methodological approaches, combining quantitative tools with Network Analysis, the study highlights the fact that there are differences between the two networks surveyed, both with regard to the actors involved and to the way in which they share information on Twitter.
