To make this shortcut version, all you need is a few simple ingredients and 5 minutes to make them. When you bake these, the condensed milk layer melts out spreads and gets caramelized and then it hardens up, turning into the most magical cookies that taste just like magic bars! Makes 6 GIANT cookies or 12 normal size cookies 1 1/2 cups cashews 1 1/2 cups unsweetened coconut flakes 3/4 cup sugar-free chocolate chips 1 cup @simplemills honey cinnamon sweet thins, crushed 3/4 can (11-12 oz) coconut condensed milk (*you can also use regular condensed milk!) Preheat oven to 350F. In a bowl mix together all of the ingredients and coat well with the coconut condensed milk. Make large spoonfuls of the mixture on a parchment lined baking sheet, making sure to give ample room because the coconut condensed milk spreads. Bake for 15-16 minutes until golden. Remove from the oven. If the coconut milk has spread, take a small bowl or spoon and gently push it towards the cookie. In a medium bowl, use a fork or rubber spatula to stir together the softened butter and sugars until combined (I like to ‘smoosh’ the mixture against the side of the bowl to really cream things together). Mix in the egg yolk and vanilla until well combined.  2. Stir in flour, baking powder, salt, and cocoa powder until evenly combined. 3. Cover the bowl with plastic wrap and chill in the fridge for about an hour - this is very important to prevent the powdered sugar from melting into the dough and to help reduce the cookies from spreading. 4. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. 5. Scoop the dough into two balls and roll well in the powdered sugar. Place on the baking sheet. 6. Bake for 11–13 minutes- when the edges are firm and set and the centers are just set. If you gently press the top of the cookie, it should slowly start to bounce back, but still feel soft inside. 7. Allow the Cookies to cool on the baking sheet for about 10 minutes so they will finish cooking on the sheet and set up the final amount. Serves 1-2 people. Shortbread Crust * 1 tablespoon melted salted butter. Plus extra butter for greasing. * 1 tablespoon powdered sugar * 2 tablespoons all purpose flour Lemon Custard Filling * 1 egg yolk * 1/4 cup white granulated sugar * 1/2 teaspoon loosely packed lemon zest, from about 1/2 a lemon * 1 tablespoon lemon juice * 4 teaspoons all purpose flour, or 1 tablespoon + 1 teaspoon * 1/8 teaspoon vanilla extract 1. Preheat the oven to 350 degrees F and grease a large ramekin well with butter. 2. Shortbread Crust - In a small bowl mix together the flour and powdered sugar then mix in the melted butter until combined. It should have a wet sand like consistency. Press the shortbread into the bottom of the greased ramekin and press down into an even layer. 3. Bake the crust for 12-14 minutes until just getting golden on the edges. Remove from oven and let cool for about 5 minutes. 4. Meanwhile, mix filling. Whisk the egg yolk and sugar in a mixing bowl. Add the lemon juice, lemon zest, and vanilla and whisk to combine. Whisk in the flour until smooth. 5. Once the crust has cooled for a few minutes, pour the filling over the crust. 6. Bake for 17-22 minutes. The filling should be just set and not jiggle when you shake the ramekin. Be careful not to overtake, remove when it has just set up. 7. Allow to cool. Either eat with a spoon or run a knife around the edge then tip ramekin upside down to remove. I like to dust with powdered sugar. Preheat oven to 350 degrees F. 2. First make chocolate ganache by warming up milk and combining it with the chocolate chips. Stir till smooth and put in fridge while making cookies. 3. Make cookies by combining flour, cocoa powder, baking powder and salt. Set aside. Combine butter, sugars and beat for a few minutes till fluffy. Add in egg yolks and vanilla extract. Add in dry ingredients and beat till cookie dough forms. 4. Take ganache out of the fridge and scoop into small balls (make 9 balls and save remaining of ganache to melt later to drizzle on top of cookies. Place ganache balls in freezer for 20 minutes. 5. Make cookie dough balls using ice cream scooper. This makes 9 large cookies. Press cavity down to place the ganache ball in the center and roll ball together. Bake for 10 minutes. 6. Take cookies out and make frosting while cookies cool. 7. Combine butter, powder sugar, cocoa powder, vanilla extract and heavy cream and beat till smooth. 8. Pipe frosting on cookie and drizzle with remaining ganache. Chill dough for 10 minutes. * Using a small or medium icecream scooper, scoop cookie dough and roll into balls. Place onto a cookie sheet leaving about 2 inches apart from each cookie. * Bake for 5 minutes and flatten cookie with back of a spoon or measuring cup. Bake for another 5 minutes till done. Remove from oven. Using a round cookie cutter you can make your cookies perfectly round if desired. Place on cooling rack. * Make frosting by beating butter and cream cheese together till smooth. Add in lemon zest and remaining lemon juice you set aside. Add in powder sugar. Beat till smooth and add in heavy cream till combined. * Place frosting in piping bag and pipe onto bottom of cooled cookie and place another cookie on top. Repeat till all cookies are filled. Em’s brown sugar cream cheese cut out cookie Recipe @the_hutch_oven 1 cup salted sweet cream butter from Costco OR use unsalted and add in 3/4 teaspoon of fine salt 1 1/3 cup firmly packed light brown sugar 4 oz cream cheese, cold 1 large egg 2 teaspoons pure vanilla extract 3 1/4 cups all purpose flour spoon and level measured 1/2 teaspoon baking powder 1/4 cup corn starch Instructions: In a stand mixer, cream salted sweet cream butter and brown sugar together on medium speed for one minute. Over creaming will make cracks in the tips of the cookies. Add in cream cheese and mix until combined. Scrape down side and mix so everything is incorporated. Add in egg and vanilla. Mix and scrape down sides when needed. In a separate bowl, whisk together flour, corn starch and baking powder. Add dry to wet ingredients and cover with a towel and mix. Preheat oven to 350 degrees. Turn dough out on a piece of plastic wrap, form into disc, wrap dough up and place in refrigerator for 15 minutes. Roll dough out on floured surface to 1/4-3/8 inch. Place cookies on an aluminum grade baking sheet (darker cookie sheets will brown faster, so will parchment) and bake on middle rack for 9-12 minutes (depending on how thick you roll them, thinner cookies will bake quicker). The center will puff up and look matte when done. Allow to cool completely and enjoy.
