Shakshuka is an easy, healthy breakfast recipe in Israel and other parts of the Middle East and North Africa. It's a simple combination of simmering tomatoes, onions, garlic, spices and gently poached eggs.

Using a sieve to strain the outer albumen. Carefully transfer egg to a ladle (it’s best to use silicone, if using stainless steel or ceramic lightly grease the ladle or the egg will stick) drop egg into pot of 200 F water, keeping egg in ladle for 4-6 seconds before tilting letting the egg slip off. Turn the heat down. Cook 2-3 min for soft yolk and 3-4 min for cooked yolk. When I first discovered this recipe I realised how easy it was to make and how tasty it was. It is truly just eggs and water steamed. You can also steam your eggs with chicken or veggie stock instead of water or some extra added flavour. I topped with chilli oil, soy sauce and some green onions but the toppings of your choice are limitless. You can top with some shrimp, more veggies or sauces. I love the texture.
