Mississippi Pot Roast * Large Chuck roast * Aus Jus packet & Ranch seasoning packet * 1 stick of butter * 8-10 pepperoncinis + some of the juice * About 30 minutes before it’s done I add green beans (you could also add potatoes and carrots, and any other vegetables you like to make it more of a stew) * Cook on low for 8 hours (best so the meat is super tender) or high for 4-6 hours. * Serve over mashed potatoes 2. Cheesy Corn/Ham Chowder * cube up 4 russet potatoes * 1 can of corn (I use frozen because there is more nutrients) * Half a yellow onion * Half a bag (8 oz) of cubed up cooked ham (I made two so I used half and half) * A few spoonfuls of garlic & Season with garlic powder, onion powder, Italian seasoning, cavendars, salt and a lot of pepper * 4 cups of chicken broth or bone broth * 30 minutes before it’s done add a cup of cheddar cheese and a cup of heavy whipping cream * Cook on low for 6 hours (until potatoes are fork tender) or high for 4 hours 3. Italian Tortellini Soup * 1 lb of tortellini noodles * 1 lb of Italian sausage * 1/2 a yellow onion diced * Season with garlic powder, onion powder, salt, pepper, Italian seasoning, few spoonful of garlic * Add two spoonfuls of sun dried tomatoes * One large can of crushed tomatoes * 3 cups of chicken broth * About 30 minutes before it’s done add half a block of cream cheese, a few handfuls of chopped spinach and a cup of heavy whipping cream * Cook on low for 6 hours or high for 3 (it’s all cooked so you don’t want it to overcook) 4. Chicken Tortilla Soup * rotisserie chicken or 4 chicken thighs * Diced up yellow onion * Cup of cilantro * Can of black beans drained * Can of corn drained * Can of green chilis * Can of fire roasted tomatoes * Season with taco seasoning or make your own, garlic powder, onion powder, salt and pepper * 2 cups of chicken broth * Cook on low for 8 hours or high for 4 * Top with tortilla strips, sour cream, cilantro, cheese Screenshot these + share with another mama!
