The aim of this study was to evaluate the nutritional and phytochemical compositions and microbio... more The aim of this study was to evaluate the nutritional and phytochemical compositions and microbiological quality of seeds of the legume Mucuna pruriens (MP) grown in northeastern Brazil. MP flour and extract were produced and evaluated for proximate, mineral, and phytochemical compositions, fatty acid profile, and microbiological quality. MP flour and seed extract showed 43.12 and 43.4% of protein, 7 and 7.6% lipid matter, 37.19 and 33.33% starch, and 5.64 and 2.36% fiber (p<0.05), respectively. Abundant minerals found were in both the extract as flour, such as potassium (635 and 679 mg/g), iron (79 and 158 mg/g), and phosphorus (83 and 93 mg/g). Flavonoids, steroids, and saponins were detected. The main fatty acids found were myristic, palmitic, oleic and linoleic acids. Microbiological evaluation did not indicate the presence of pathogenic or spoilage microorganisms. MP produced in Northeastern Brazil is an alternative source of carbohydrate, fiber, protein, essential fatty acids, minerals, saponins and flavonoids, which may encourage its potential consumption and marketing.

Both the taste and aroma of cachaça, an alcoholic beverage produced by yeast fermentation of suga... more Both the taste and aroma of cachaça, an alcoholic beverage produced by yeast fermentation of sugar cane, are influenced by yeast metabolites and volatiles. The knowledge of yeast population dynamics during the fermentation process will help to establish the basis for quality control of alcoholic beverage. In the present work, the population dynamics of three fermentation processes, with differing levels of technological sophistication, were studied. Saccharomyces cerevisiae was found to be the dominant species, but Candida milleri (Candida humilis), Pichia caribbica, Pichia guilliermondii and Zygosaccharomyces fermentati (Lachancea fermentati) were also significantly involved. In addition, four new yeast species that are not represented in NCBI/EMBL nucleotide database were found. These yeasts were classified as Candida sp., Candida drosophilae-like, Candida ubatubensis-like and Zygosaccharomyces sp. In fermentation trails at laboratory scale, all species were found to contribute to the production of volatiles. Thus it is probable that product quality is strongly dependent on population dynamics during the fermentation process.

Currently, there are no reports in the literature demonstrating any animal model that ingests one... more Currently, there are no reports in the literature demonstrating any animal model that ingests one of the fattiest animal food source, the bovine brain. We hypothesized that a high-fat diet (HFD), based on dried bovine brain, could be used to develop an animal model possessing a spectrum of insulin resistance-related features. The HFD was formulated with 40% dried bovine brain plus 16.4% butter fat, prepared in-house. Furthermore, the diet contained 52% calories as fat and 73% of total fatty acids were saturated. Swiss mice weighing about 40 g were assigned to two dietary groups (n=6/group), one group received a standard chow diet and the other was given HFD for 3 months. The body weight and biochemical parameters of the animals were measured initially and at monthly intervals until the end of the experiment. Animals fed on a HFD showed a significant increase in the body and adipose tissue weight, serum total cholesterol and triglyceride levels, when compared with mice fed on the control diet. Additionally, the HFD group showed higher circulating levels of liver transaminases, such as alanine aminotransferase and aspartate aminotransferase, compared with the control group. Finally, to illustrate the usefulness of this model, we report that the HFD induced mild hyperglycemia, fasting hyperinsulinemia, and increased the homeostasis model of assessment (HOMA-IR), in comparison with the control group. In conclusion, our results show that HFD, based on dried bovine brain, causes insulin resistance-related metabolic disturbances. Thus, this may be a suitable model to study disturbances in energy metabolism and their consequences.

RESUMO-No semi-árido brasileiro, várias oleaginosas têm sido utilizadas para a obtenção de óleos ... more RESUMO-No semi-árido brasileiro, várias oleaginosas têm sido utilizadas para a obtenção de óleos vegetais, dentre as diversas espécies que formam a flora da Caatinga, o Catolé, Syagrus cearensis. Foram feitas análises de teor de ésteres por cromatografia gasosa em 300 mL de gordura obtida de dois quilos da amêndoa. Na fase de transesterificação observou-se que o biodiesel apresentou coloração límpida, apresentou um índice de acidez de 1,23±0,02 mg de KOH/g; um percentual de ácidos graxos livres de 0,86 ± 0,02 % e uma viscosidade cinemática de 30,76 ± 1,17 mm²/s. Foram observados dez tipos de ésteres no biodiesel de catolé (C8; C10; C12; C14; C16; C18:0; C18:1; C18:2 e, C18:3), em maior percentual o 18:2, 18:1 e o 16:0, os quais dão melhor qualidade ao biodiesel, com pureza real de aproximadamente 70%. As análises classificaram o biodiesel de óleo de catolé como mais uma matéria prima disponível no sertão Nordestino-PE para a produção de biodiesel.

The experiment was carried out in typic eutrophic Regolithic Neosol (0-20 and 20-60 cm layers) located in the private reserve of the Riacho do Papagaio farm, in São João, PE, Brazil. The tests were carried out under laboratory conditions at 24 ºC and sulfamethoxazole concentration was determined by high-performance liquid chromatography. The sorption experiment through the batch method used sulfamethoxazole solutions with concentrations of 10-3, 5.10-4, 10-4, 5.10-5, 10-5 and 5.10-6 mol L-1 to obtain the analytical curve. For this soil, sulfamethoxazole sorption kinetics was best described by a second-order model and the sorption isotherms were linear. Sulfamethoxazole predominantly interacts with organic matter in this type of soil. Mesquite [Prosopis juliflora (SW) D.C.], a perennial tropical plant commonly found in Brazilian s... more Mesquite [Prosopis juliflora (SW) D.C.], a perennial tropical plant commonly found in Brazilian semi-arid region, is a viable raw material for fermentative processes because of its low cost and production of pods with high content of hydrolysable sugars which generate many compounds, including ethanol. This study aimed to evaluate the use of mesquite pods as substrate for ethanol production by Z. mobilis UFPEDA205 in a submerged fermentation. The fermentation was assessed for rate of substrate yield to ethanol, rate of ethanol production and efficiency of fermentation. The very close theoretical (170 g L-1) and experimental (165 g L-1) maximum ethanol yields were achieved at 36 h of fermentation. The highest counts of Z. mobilis UFEPEDA-205 (both close to 6 Log cfu mL-1) were also noted at 36 h. This study had as aims the extraction, purification and characterization of moringa oil for every... more This study had as aims the extraction, purification and characterization of moringa oil for everyday applications with backing scientific. The average oil yield was of 23.92%, using the techniques: mechanical pressing (11.36%) and by with hexane extraction (35.48%). The oil extracted by pressing was analysed for gas chromatography, revealing a profile of 21.5% of saturated fatty acids and 78.5% of unsaturated fatty acids, having the oleic acid as the major component. The mixed crude oil was refined in four steps: degumming, neutralization, washing and drying. The crude and refined oils were characterised through their acidity index (8.8; 20.5 and 0.2 mg KOH g −1), peroxide index (3.3; 5.4 meqO 2 kg −1 and not detected), water content (876.6; 632.0 and 630.2 mg kg −1), turbidity (64.1; 12.6 and 2.1 NTU), specific mass (909.5; 907.2 and 907.0 kg m 3), kinematic viscosity (43.6; 39.1 and 41.7 mm 2 s −1), high power calorific (39.7; 40. and 39.4 MJ kg −1) and calorific value lower (36.9; 36.9; 37.1 MJ kg −1), and ash content (0.05; 0.05 and 0.007%), respectively. The results show that moringa is a viable and sustainable plant in the use of its oil as raw material for several industries, especially in the food, cosmetic, pharmaceutical and biodiesel industry. Cette étude avait comme objectif l'extraction, la purification et la caractérisation de l'huile de moringa pour des applications quotidiennes. Le rendement moyen de l'huile était de 23,92 %, en utilisant les techniques suivantes : pressage mécanique (11,36 %) et extraction à l'hexane (35,48 %). L'huile extraite par pressage a été analysée par chromatographie en phase gazeuse, révélant un profil de 21,5 % d'acides gras saturés et 78,5 % d'acides gras insaturés, l'acide oléique étant le composant principal. L'huile brute mixte (mélange des huiles extraites par pression et solvant, proportion 1:4) a été raffinée en quatre étapes : dégommage, neutralisation, lavage et de séchage. Les huiles brutes (pressage ou solvant) et l'huile raffinée ont été caractérisées par leur indice d'acidité (8,8 ; 20,5 et 0,2 mg KOH g −1), leur indice de peroxyde (3,3 ; 5,4 meqO 2 kg −1 et non détectée), leur teneur en eau (876,6 ; 632,0 et 630,2 mg kg −1), leur turbidité (64,1 ; 12,6 et 2,1 NTU), leur masse spécifique (909,5 ; 907,2 et 907,0 kg m −3), leur viscosité cinématique (43,6 ; 39,1 et 41,7 mm 2 s −1), leur pouvoir calorifique supérieur (39,7 ; 40,0 et 39,4 MJ kg −1) et inférieur (36,9 ; 36,9 ; 37,1 MJ kg −1), et leur teneur en cendres (0,05 ; 0,05 et 0,007Les résultats montrent que moringa est une plante viable et durable dans l'utilisation de son huile comme matière première pour plusieurs industries, en particulier dans l'industrie alimentaire, cosmétique, pharmaceutique et le biodiesel.
