This recipe is very simple.The flavor profile of the dish is made when the onion, garlic, mushrooms, salt and red pepper are sauteed together. After this, throw in the chopped bok choy and coconut milk and you have a wonderful dish. The bok choy helps to make it saucy. Adding another tablespoon or two in no way compromises the flavor. For vegans and vegetarians (side dish for the carnivores), this is a wonderful meal when served on a bed of brown rice. Enjoy!

This penne skillet pasta dish is simple and relatively easy to make. Blend in a cast iron skillet 2 1/2 to 3 cups of cooked pasta (I used wheat penne), 1 lb of cooked spicy ground sausage, 1 1/2 - 2 - 24 oz bottles of marinara sauce, and 2 cups of parmesan cheese. Top with 1 cup of panko bread crumbs. Bake on 375 for 20-25 minutes or until bubbly. Remove from oven. Top with 1 tbsp of cilantro or favorite herb.
Simple, Flavorful Lentil Soup for Deliciously Easy Weeknights
Red Lentil Soup I used half the recommended amounts of smoked paprika and cumin. Add 1/4 to 1/2 tsp of black pepper (or red pepper) for heat. Easy to make. Simply delicious!
This simple recipe is really good, quick, and well seasoned. Shaking on the seasonings with a brown paper bag works quite well and coats the fish evenly. Give it a try!
Corn & Black Bean Quinoa Salad Recipe | Gimme Some Oven
Made this recipe on a Friday night when I was high on hunger but low on ingredients. Did not have peppers, cilantro, green onion or red quinoa. Did have everything else. It turned out great. Sautéed one cup of sweet corn with red onion. Combined this with white quinoa, drained black beans, olive oil, chipotle pepper, and cumin. Yummy.
Stir-Fried Green Beans with Shrimp and Garlic
This is a simple recipe that even works with frozen green beans. I put in a bit more fish sauce for extra flavor. Tasty.
Robin's Quinoa with Mushrooms and Spinach
Quinoa with Mushrooms and Spinach Recipe. This is a really simple and light recipe. Since I did not have broth in the house I made it with water and just used extra onion, garlic, and black pepper to help make the quinoa flavorful. Also cooked it with 1/2 tsp of salt. Be sure to season the mushrooms well. I put the spinach (frozen) in with the mushrooms rather than with the quinoa. It is very good.
Bay Scallop Gratin
This Bay Scallop Gratin is quite simple and delicious. I left out the minced prosciutto (because I didn't have any) and used half the amount of salt the recipe call for. I cooked it for 10 minutes and then put the dishes under the broiler for 2 minutes to form a nice crust on top. This is tasty and light. I served it with a side of brown rice. Yum.

This braised red cabbage is delicious recreation of J. Alexander's cabbage. I used half the amount of cider vinegar, half the amount of olive oil and a little extra wine. Cooked it for 25 minutes. It is simply scrumptious.
Recipe: Classic Butternut Squash Soup
This soup is really good. If you use 3.5 cups of broth instead of 4 it will be thicker and even creamier. Add a 1/2 tsp of nutmeg to set it off. The hardest part is peeling the butternut squash. After that, it is simple.

These zucchini muffins are tasty and easy to make. You could use just on cup of sugar and be okay. Beware though, you will have about two dozen muffins on your hands. Since they freeze well, you will have some for now and some for later.
