Easy Breakfast Casserole 🥐 🥐 | breakfast | Easy Breakfast Casserole 🥐 🥐 | By Josh Elkin | Alright, for this casserole, we're going to use six mini croissants. First thing I'm going to do is cut them in half. Essentially, we're going to be making sandwiches as each layer. You don't really have to cut them perfectly just sort of you know do you the best job as you can now obviously if you're using a bigger casserole dish you can use more croissants so you're not that perfect but we'll do set those aside then bring in your lightly greased casserole dish and layer the bottom with the bottom parts of the croissant and you can overlap here that's perfectly fine you're probably going to do anyways. Alright, now comes the fun part. We start layering. First layer, you guessed it, cheese. I'm using Colby Jack. Feel free to use whatever cheese you want. Whatever cheese is on hand. Then on top of that we're going to add some pre-cooked hash browns. This is like a southwest kind of style. Now, the reason you want to use precooked is because if you put raw potatoes in here, there's just not enough direct heat to cook them fully. So, it's best off that you just kind of use a precooked version. This is something really easy you can make for like a a brunch party. You can make it ahead of time. Super simple. Now, don't go too heavy with the potatoes. There's a lot of layers that are happening in here. Alright once that's done time to layer some bacon obviously. Again not necessary. You don't need to use bacon. You can use turkey bacon if you want. Totally okay. There's going to be a lot of ingredients in here like I said so use your best judgement. Now obviously I'm kind of alternating the way the bacon goes. Sort of get as much coverage as I want. Now you see that there's like bare spots here. Well I obviously have some extra bacon left over so I'm just going to fill that with extra strips here. Again, the idea is to get total coverage, right? Now, you can add more cheese if you want or you can just go ahead and start adding some sausage which is my preference. This is a casserole that's not going to be determined by how many croissants you use right so I used six croissants but we're not necessarily going to feed six people this could probably feed you know nine people or twelve even now things are going to get a little crazy okay we're going to add some green onions Gotta have some vegetables. Am I right? And I like it a little spicy and with a little bit of tang. So I'm going to use some pickled jalapenos as well. Again feel free to use whatever you want. You want to use like peppercinis that are a little lighter in spice or green peppers. Really the choice is yours. Just like kind of spread that out a bit. Alright. Dare I say more cheese. That's right. We didn't put enough in already so we're going to add some more cheese in there. Before we add the tops of the croissants let's set this aside real quick. And start getting on a egg mixture if you will. Now I'm using this because it's just really easy to pour. Use a bowl if you want. No problem. Now the rule of thumb here is essentially one egg per croissant. So we got six croissants. We're going to use six eggs. We're also going to combine this with some milk. And obviously season it with some salt and pepper. You want to season that with some pepper. You want to add some salt And then you want to whisk it up as best you can. Now I'm using this fancy this fancy fun whisk right over here. As you can see it's always a good time. Now, once it's all uniform in color and consistency, as you can see, there's no like runny yolks in there or anything like that. You want to bring it over to the casserole dish and cover the entire thing before we add the tops of the croissants. Press it down. Okay, you want some tightness then bring over your egg mixture and just I would start by the the exterior sides so that it gets like in the nooks and crannies and then once you've made a full three sixty, you could start going in the center. Now, you shouldn't be going to the top because the eggs are going to cook a little bit so you want to leave a little bit of space. Now, just add the croissants back on. Now we're going to pop this in the oven at 375 degrees Fahrenheit for about 25 minutes. And then we're going to cover it in everything bagel seasoning and more egg wash. Alright this has been in the oven for about 25 minutes. One more step. Now it might be a little moist on top and that's totally okay. There's a lot of grease. A lot of cheese going on. I'm going to hit the top with a lightly beaten egg. Just a little bit. We're going to put it back in the oven so it can get golden brown and crispy on top but not before adding a bit more flavor by ways of everything bagel seasoning. So I'm just going to sprinkle some of that on top. And the egg wash is going to kind of help that adhere to the croissants. This goes back in the oven at 375 for another 5 minutes. Wow. Look at that. I mean you could I guess you could probably eat this as is you know like a sandwich. Or you could put it on a plate. Now, if that's not a breakfast casserole, I don't know what is. Nailed it.

Cook it for another few minutes then put it on a plate. You can eat it as is or you can add a scoop of Oreo ice cream and a drizzle of sweet and condensed milk. It's really hard to explain how amazing this is but you know what's not hard? Remaking it at home. This is not legal.

So I have a bunch of Colby Jack cheese here and then I'm going to layer on some cooked tater tots. You can also use hash browns if you want and I'm just going to use the back of a spoon to press these down so that we can continue the layering process. Next up is a strip of cooked bacon and two scoops of soft scrambled eggs which I mixed with some cheese. Now, on top of that goes a cooked sausage link and you can use whatever seasoning you want. This is like an all-purpose herb seasoning that I really enjoy and now you're just going to roll it up. Tuck in the sides and continue rolling basically as if you're rolling a burrito. I know enchiladas typically have open ends but this one has closed. Then, I'm lining this pan or this pyrex dish rather with a bunch of these and on top of it goes some red enchilada sauce. You could also use green enchilada sauce if you want. No big deal. And then on top of that goes some cooked chorizo. I'm using some pork chorizo. You could use beef chorizo. You could use soy chorizo. Um whatever you want really. You could also not use any of it. But I find that this adds a nice little spice. Uh some added texture as well. And then on top of the chorizo we're going to add not one but two types of American cheese so I'm alternating here I got yellow American cheese and I got white American cheese I I couldn't decide which one I wanted so plus it adds a nice little design on top like a checkered board design if you will that's when I'm going to place it in the oven at around 375 degrees for 5 to 10 minutes and then I'm going to add a layer of tomatillo salsa. Garnish it with some chopped chives. This is such an awesome breakfast dish. You can make it ahead of time and then not put it in the oven until your party or your friends come over or your family wakes up from Saturday morning or whatever. You can also freeze it if you want and feel free to add whatever ingredients you like for breakfast. This thing has soft scrambled eggs, bacon, tater tots, sausage, cheese, chorizo, green salsa, and to make it breakfast, chopped chives. Let's crack into this. Whoo. Look at that glory. Glory that is Breakfast. Glory glory. Hallelujah Breakfast. Look I'm any chance I get to make a breakfast burrito or enchiladas or whatever you want to call this I'm going to do it. Wow.
