Recipe: Quinoa & Black Bean Salad  Ingredients: - 1 cup quinoa, rinsed - 2 cups water - 1 can (15 oz) black beans, drained and rinsed - 1 cup cherry tomatoes, halved - 1 red bell pepper, diced - 1 avocado, cubed - 1/4 cup fresh cilantro, chopped - Juice of 2 limes - 1 tbsp olive oil - Salt and pepper to taste  Instructions: 1. Cook quinoa in 2 cups of water: bring to boil, reduce heat, simmer 15 mins. 2. Fluff quinoa, let stand 5 mins. 3. In a bowl, mix quinoa, beans, tomatoes, bell pepper, avocado, and cilantro. 4. In a small bowl, combine lime juice, olive oil, salt, and pepper. Whisk well. 5. Pour dressing over salad, toss gently. 6. Serve chilled or room temp.   Rich in protein, fiber, and healthy fats!
