Joe Chu on Instagram: "Simple, High-Protein Spring Roll Bowl 🥗 Ingredients: - vermicelli noodle (2 oz, raw) - shrimp (100g) - cucumber (100g) - lettuce (100g) - edamame (80g) - beansprout (60g) - black pepper (1 tsp) Ingredients for the sauce: - fish sauce (3 tbsp) - white wine ( 1tbsp) - lime juice ( 1tbsp) - pineapple juice (7 tbsp) - jalapeno (¼ tbsp) - minced garlic (½ tsp) Directions: 1. Start by boiling water and adding in your vermicelli noodles and draining the water. Set aside and boil your shrimp until it turns pink & curls. Season your shrimp however you like, but I used black pepper. 2. For the veggies, dice up thin strips of Persian cucumbers and lettuce. Then steam some beansprout and edamame. 3.
