Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl 2️⃣Infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken 3️⃣Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor 4️⃣Lastly, the dry spices bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes) 5️⃣Mix it super well and let it marinate for 2-6 hour

The key is to never overcrowd the roasting tray and to make sure the veg are sliced quite thin on all the right places so they can get nice and crispy in all the right places. Also don’t be shy with the olive oil, salt and vinegar. As always, try best to cook intuitively and not get stuck too much on specific quantities. Just let it flow and roast!
