We’ve kept the salsa quite mild as taco so it’s kid friendly, so we finish the tacos with a good dose of hot sauce. 1 soft shell Australian bay lobster (@australianbaylobster) Tempura batter 60g rice flour 100ml ice cold water Pop the flour into a bowl. Stir in the water (I use chop sticks) It should resemble butter milk. Dust mix 1 tbsp Rice flour A pinch of S&P A pinch of Chili powder Oil for deep frying Season the lobster, prawn or whatever you’re using in the dusting mix. Coat in tempura batter. These elegant ‘tacos’ from Stu Deeley are made by baking a rich cracker over metal tubes to give them their elegant curved shape. The tubes are then filled with a rich crab and XO mayo filling. Any small ovenproof tube-shaped mould can be used to make the crackers.
