40min · 2 servings Turmeric coconut butternut squash soup INGREDIENTS • Coconut milk • Butternut squash • Turmeric salt • Chickpeas • Olive oil • Garlic • Salt & Pepper • Cumin • Coriander • Chilli Ginger INSTRUCTIONS • Place squash, onions, ginger, turmeric salt, pepper and olive oil on a roasting tin • Add garlic with oil and roast • Combine chickpeas, cumin, salt, pepper and olive oil and roast • Blend the vegetables with coconut milk, salt and pepper • Heat ginger and chilli Serve the soup with the topping, ginger & chilli oil and coriander Enjoy ! •
