This was absolutely fantastic. Perfect appetizer. Let's get started. This is the prosciutto I'll be using. So I'm using six ounces of prosciutto. I got two of those little packs. And this is not that easy to take out of the the pack. They kind of get stuck a bit but it's okay. Just go ahead and just keep overlapping them just like so. All the way around. And overlapping helps them just stick to each other so they're easier to wrap around the brie cheese. Just doing that. You can also use bacon. That's totally up to you. Just like so and you can also season it right in the center. Once you got them all overlap, take out your brie cheese, put it right in the center, and just go ahead and fold the prosciutto just like so all over. We're going to be smoking these at 2325 degrees for about 45 minutes. Make sure it's nice and tight on there. Imma be using this little rack right here just to easier for to transport and everything. Going a grill and I'm using some garlic paprika little smoking briquettes by Kingsford and I'm going to hit it with that cherry cola seasoning by Fire and Smoked I did forget to season it so I did it on the grill but it's all good after about 40 minutes is what it's looking like so while that's hanging out let's go ahead and make that bacon jam super simple four strips of bacon once it look like this we're going to go ahead and remove them so of course you want to you know slice em on up. Just a medium sweet onion goes in. Finally diced. Once it looks like this, add some butter to it as well about a tablespoon. Get that combined. Alright from here add your bacon back in Gonna be adding a quarter cup of syrup and about three tablespoons of brown sugar. Once everything's nice and combined. Place it back in that onion bowl or a separate bowl. Now, I'm using baguettes. Gonna thinly slice these up just like so. We're going to be toasting these a little bit with some avocado oil possibly 30 seconds per side or so. Just like that, lay em in the pan. You can cut em a little thicker. It's totally up to you and just flip em just like that. Looking nice and golden. Now, the breeches already all done. We top it off with that bacon jam. You're going to go ahead and slice into it. And then you know you can cut the prosciutto a little smaller. So that way you can you know serve it up on those crostinis. But this came out absolutely fantastic. Go and give it a go.
