Kalakand: 2 lbs ricotta cheese Cardamom powder 1/2 tsp or crushed cardamoms 8 Oil 1 Tbsp Butter 1 cup Sugar 1/2 cup Nido 3/4 cup For Garnish: Sugar balls (optional) Silver edible paper(optional) Line a baking dish with parchment paper. Heat oil on medium heat, then melt butter. Add cardamom powder, give it a stir. Add cheese and cook it on low heat. Now starts the tricky part....Keep stirring constantly otherwise cheese will start sticking to the pan and will start burning. After a while add sugar and let the mixture to evaporate all water from it. Constantly Stirring on a medium low heat is the key. Keep doing until all the water evaporates but mixture should be little sticky and then add Nido. Stir for another 8 or 10 minutes until it starts leaving the sides of the pan. Dish out on a baking tray, set with a specula. Cool it at room temperature and then garnish.Put it in refrigerator for at least an hour so that it gets firm enough to cut in cubes easily.

The combination of saffron and pistachios gives this dessert a rich and luxurious flavor that is sure to impress your family and friends.The key to a successful kalakand is to cook the milk and condensed milk mixture until it reaches the perfect consistency, and then adding in the kesar and pista for that extra burst of flavor. If you use sugar instead of condensed milk then you will have to boil longer and it will not be as creamy as it would be with condensed milk.Recipe-- We need 2 ltr Full Fat Milk- Out of that take 1.5 ltr in a separate container, bring it to a boil; let it cool down for 5 minutes - keep stirring constantly- Then add mixture of water and vinegar (3 tbs & 3 tbs water)- Let milk curdle, then strain Chena and wash it fresh water so vinegar sourness goes away- Keep Chena aside- Now take remaining 1/2 ltr milk in a heavy bottom kadhai- Boil it till the quantity of milk becomes half, keep stirring the milk- Now add soaked saffron & 1/2 cup condensed milk (or 1/3 cup sugar)- Mix everything well- Once you get one boil, add Chena - make sure Chena is well crumbled while adding - do not put any large chunks of chena.- Let everything get cooked together- Once you see the mixture is getting dry, then add 1/4 cup finely chopped Blanched California Pista- Do not let mixture dry completely in the kadhai- On the side, prepare the setting tray for Kalakand by greasing the tray with ghee.- Then pour this mixture into the setting tray.- Garnish with some more pista.- Let it cool down completely, it will take 2-3 hours- Cut into pieces and enjoy this festive season...American Pistachio Growers - India …….. Keep an Iron Pan on the flame, grease some Ghee on it, and put the Raw Milk in it for boiling. Stir the milk till it starts boiling then let it for boiling till it becomes half. Scrap the cream from the sides of the pan. Then put a pinch of Citric Acid in it or you can put some drops of Lemon Juice in it. Let it for boiling again for 5 mins. Then put Sugar in it gradually and keep the flame high and cook it more. Then add Ghee in it gradually and stir it continuously. You can add Mawa/Khoya in it also. When Sugar starts caramelizing and Milk gets thick then turn off the flame. Put the Mawa in the greased Tin and cover the tin with a plate and then cover it with a thick cloth. Keep it at a warm place for 7-8 hours. In this way, Alwar’s Famous Milk Cake will get ready.
