Ingredients:
For the Garlic-Ginger-Green Chilli Paste:
- 10 garlic cloves
- 2-inch piece of ginger
- 4-5 green chillies
- Divide in 3 parts

For Methi Muthiya:
- 1 bunch (approximately 200g) methi leaves, washed and finely chopped
- 1 cup wheat flour
- 1/4 cup besan (gram flour)
- 1/2 tsp ajwain (carom seeds)
- 1 tsp white til seeds (white sesame seeds)
- 1/2 tsp red chilli powder
- 1/4 tsp turmeric powder
- 2-3 pinches of hing (asafoetida)
- 1/2 tsp dhania powder (coriander powder)
- 1 tsp powdered sugar
- 1 1/2 tsp lemon juice
- Pinch of baking soda
- 2 tbsp oil
- Water (as needed to form a stiff dough)
- 1 tsp oil (for kneading)
- Oil for deep frying

For the Green Tuvar (Pigeon Peas):
