I love making these when the sushi craving hits but want to save money and stay home. Plus who has time to make sushi rolls anyway? The shrimp is tossed in a delicious sauce and gets nice and crispy in the oven—the perfect handheld, bite sized appetizer or meal!⁣ ⁣ 1 1/2 cups cooked rice, I used jasmine but any rice will work⁣ 3 sheets nori, cute into 12 squares⁣ 1 lb peeled and deveined shrimp (uncooked), cut into small pieces⁣ Pinch of salt⁣ 1/2 cup softened cream cheese⁣ 3 tb kewpie mayo⁣ 1 tsp sriracha⁣ 2 tb soy sauce or coconut aminos⁣ Chives for garnish ⁣ ⁣ Prepare 2 cups of rice according to package instructions and set aside. Preheat oven to 400F. Next, pat dry the shrimp and cut into small pieces. Add a pinch of salt. In a separate bowl, add the softened cream cheese, kewpie mayo, sriracha and soy sauce/coconut aminos. Mix well. If the cream cheese makes it hard to mix, just microwave for 20 seconds. Pour the sauce onto the shrimp, and toss to coat well. Cut the nori sheets into even sized squares. Add 1-2 tb cooked rice to each square, pressing down with your fingers or the spoon. Press each nori square into a muffin tin. Scoop 1-2 tb of the shrimp mixture into each muffin cup. Bake for 15 minutes, then broil for 2 minutes at the end to get the top crispy. Remove from oven, top with extra spicy mayo and chives for garnish. These are best served immediately. ⁣ | Kalejunkie

Season both sides with salt and pepper. 2️⃣ Cut the spring roll wraps across both diagonals to create four small triangles. 3️⃣ Pour water in a small bowl. Working one at a time, orient the spring roll triangle with long flat side facing towards you and the pointy side facing away. Using a pastry brush or your finger, moisten the whole right side of the triangle including the tip. 4️⃣Lay the shrimp on the left side of the wrap so the tail is facing towards you, sticking off the edge of the flat side of the triangle. Make sure there is 1/2-inch of room left beyond the shrimp at the point of the triangle. Eat the rolls dipped in the sauce as is or with butter lettuce wrapped around each for a fresh contrast.
