This stuff is amazing. It is like a pasta. It is a rice. But it always comes out tasting so delicious. And here I picked up a big jar of sun dried tomatoes. This stuff it just smells amazing. I swear anytime I get to use this in a recipe I know it's going to be such a tasty one. So I'm going to throw a good amount in there and look I'm going to take the juice that's in there also. And this is going to go right over the pasta. So this is going to feed a lot of people. So be sure to pick up two packages of this pasta. And to help it cook in the oven. Here I have some chicken broth. So just go ahead and go slowly all the way around. And we're just going to throw enough to cover all the pasta. We're probably going to have to use this whole thing so I'm not worried about it too much. So as you can see it starts sipping out. That is a perfect amount. So just real quick I'm just going to pat it down just to kind of gauge to see how much we have. And honestly this is looking so tasty. But I always throw in a touch of heavy cream. This is going to make our sauce creamy. You know go figure. And I'm not going to measure this out but I'm just going to do a little plug like that all the way around. And we are just going to mix this together. Just be sure to fold over the pasta and mix in all of the heavy cream. So once you have all of this mixed together. The only seasoning I'm going to use is this Italian seasoning because we have a lot of flavor from the sun dried tomatoes and the chicken broth. So this seasoning with the parsley and everything that's in there is going to give it the kick starter that it needs. And before I mix everything in I need some vegetables with this so I'm garning some gravy spinach. So while you're doing this I do have my oven preheating at 375 degrees so we're going to be sticking that in there for about 30 minutes and just go ahead and grab your baby spinach and just fold it right over we don't have to fold it too much but I just want to make sure to get some of it covered just to make sure the spinach doesn't burn because as it cooks it is just going to wilt down and we're going to have ourselves such an amazing refreshing meal I know it's been getting hotter lately so these pasta dishes with the sun dried tomatoes and the fresh spinach on top are always such a pleasant to eat. Okay, so this is looking so amazing already. I'm going to stick this in a 375degree oven for about 25 to 30 minutes. So while we have our orzo pasta in the oven, we are going to start working on our meat mixture. So I'm taking some, this is a hot Italian sausage. Just go ahead and break this up a little bit. And to help it cook and give it some flavor, we're going to throw in a roughly chopped onion. Let's go ahead and break break it apart a little bit. And for one last final touch, we have some garlic. So I'm just going to cook all these together until the onions are a little bit translucent and we got some beautiful color on our meat. So after a few minutes once you got some color and I don't know about you guys but I like trying my meat a little bit. I feel like it gives it so much flavor. This is where they take off the heat. And this smells like absolute perfection. So you can see that the orzo pasta picked up all of the juice and it is so soft to the touch. So before we start mixing everything in, here I have our meat mixture. I'm telling you, you gotta get these crispy edges. It is going to make such a big difference. I am so excited to eat this. I've been using a lot of this Italian sausage a lot recently. I kind of replace a lot of my ground beef recipes with it. And I mean look. So I'm just going to give this a quick little mix and we will be ready to eat. Alright so I'm just going to take a little here just because I want to make sure I scoop up a good amount of it. And this is a little hot so it does need to rest for a little bit but man this is going to be amazing. So this is definitely one of those meals where I always look forward to eating. So also one of those I feel like I can make everyday to eat. But you know I like to try so many different foods. It is just so well balanced. It's nice and creamy. It's a little bit spicy. It tastes fresh.

Welcome back to Cooking Upside Down and today we’re paying tribute to one of my all time favourite pies, the Spanakopita. #recipe ⬇️ • 1 packet of filo pastry (roughly 10 sheets) • Olive oil • Salt and pepper • 300g feta cheese • 2 shallots – finely sliced • Fresh dill and fresh mint - chopped • 300g fresh spinach • 2 large eggs - beaten • 100g Greek hard cheese such as Kefalotyri. (or use Parmesan) • 150g butter - melted You’ll need a large baking tray, lined with a piece of parchment paper. Pre-heat your oven to 200C / 392F Drizzle the tray with olive oil, then sprinkle on a little salt and pepper followed by a sprinkling of freshly chopped dill and mint. Crumble over a little bit of feta, then scatter over the onions. In a bowl, beat the eggs and crumble in the remaining feta. Grate over the hard cheese and add the herbs then mix it all together well. Lay 1/3 fresh spinach on top, creating a sturdy pile in the middle of the tray with a generous boarder around the outside. Spoon over ½ the egg mixture, then lay another 1/3 of the fresh spinach on top followed by the remaining egg mix. Then lay over the final 1/3 of fresh spinach and gently push the whole lot down. Melt a little butter in a bowl and add two tablespoons of olive oil and mix well. Open the pack of filo pastry and brush the top pastry sheet with the butter then carefully pick up this sheet and lay it over the spinach. Continue this way until you’ve used all the filo sheets. Finally scrunch the edges of the pie up all the way round and bruch the top with butter. Bake for 35 – 40 minutes until darkly golden. Allow it to stand for 5 mins before laying a piece of parchment paper on top and then a board or platter and swiftly flip it right side up. Cut into triangles and serve.
