When I was a kid, my family loved to cook bellfish. So this reminds me of lots of childhood memories. I hope that you will enjoy it as much as I do. Bellfish is available in most Asian grocery stores. You can also replace it with other types of fish. Slide each piece of bellfish crosswise about a quarter inch apart without cutting all the way through. And do the same on both sides. In a bowl, transfer the bellfish inside. Add the ginger, scallions, rice wine. And white pepper. Marinate for 10 minutes. Then discard the liquid, ginger and scallions. Add the cornstarch. The cornstarch helps to keep the moisture inside the fish. The oil also wouldn't splatter as much. To make the sauce, mix together the chicken stock. You can also replace it with water. Soy sauce. Dark soy sauce. Oyster sauce. Vinegar or other types of vinegar and sugar. In a pan over medium heat, add the oil and the bellfish. Cook until golden brown on both sides. About 3 minutes. Remove most of the oil in the pan. Add the ginger. And garlic. Cook until aromatic for about 30 seconds. Add the sauce inside. Turn to medium low heat. Cover the lid. Simmer for about 4 minutes. And cover the lid. Turn to high heat to reduce the sauce for about 3 minutes. And garnish with scallions. And red chili peppers.
