Thai Beef & Mango Wraps
Put a new spin on deli roast beef with a simple Thai dressing. Wrap it up with juicy mango and red pepper strips for an easy-eating dinner. Squeeze about 2 tbsp lime juice into a medium-size bowl. Stir in fish sauce, sugar, chili-garlic sauce and coriander. Add shaved roast beef. If using sliced roast beef, first slice into thin strips, then stir into lime mixture. Slice mango and pepper into thin strips. Lay tortillas on counter. Place greens across centre of each. Top with beef mixture, mango and pepper. Fold left and right tortilla edges toward centre. Fold bottom tortilla edge toward centre, then roll up. Fasten with toothpicks. Slice rolls in half and serve
