If you like canyons, Black Canyon of the Gunnison National Park is not one to miss. These steep cliffs of dark rock offer visitors a very different experience from the vast landscapes of Grand Canyon or Canyonlands National Park, where the canyon edges fade into the distance. Here at Black Canyon of the Gunnison, you get a much closer look at the opposing canyon walls, which makes for some pretty impressive drop-offs.

Each RVer has a preferred type of campground. Some enjoy the convenience of full hookups at an RV park and others want to be out in nature with more privacy. As we began this RV adventure with Bex, we had our own ideas of what we’d prefer. But we were RV newbies, so I was curious to see how our opinions change as we travel. I’ll have to share an update on this post in a few years. For now, here are my thoughts as we head out on our first trips:
RV life is always changing, especially from trip to trip, so you could say we’re still getting our sea legs under us when it comes to boondocking. But over 2 years into owning Bex, we’ve racked up quite a few nights of boondocking. We boondocked 37 nights in 2023, and while each situation was a little bit different and some stays are shorter than others, we have found a system that works well for us. What is Boondocking? It’s probably best to start with a definition of boondocking. Technically, boondocking is camping on land without any services or hookups in an area that’s not officially a campsite.
I had such a hard time searching for recipe ideas, so I thought I’d share what I’ve put together for our family. Here are our favorite RV Camping meals that work for us whether we have hookups or are boondocking.
