Unlike anything else I’ve ever baked 😍 so flaky and soft and also why don’t we have a raspberry emoji, it’s the best fruit! You’ll need: 2 cups all purpose flour 1/3 cup granulated sugar, more for topping 1/4 tsp baking soda 2 tsp baking powder 1/2 tsp salt 1 4oz stick frozen butter 1 egg 1/3 cup full fat yogurt 1/3 cup heavy cream, more for brushing 1 tsp vanilla Raspberry jam: 2 cups frozen raspberries 1/4 cup sugar 2 tsp cornstarch + 2 tbsp water •Add raspberries and sugar to a pot and bring to a light simmer. •Add in cornstarch slurry, stir well and simmer for 3-4 minutes •Transfer to a glass jar and place in the fridge to cool down •Preheat oven to 400F •In a bowl add flour, sugar, baking powder, baking soda and salt. Whisk together •Slice frozen butter into matchsticks and add to the flour •Using your hands work the butter in until pea sized pieces of butter are left •In a cup whisk together egg, yogurt, cream and vanilla •Add to the dry ingredients and using a fork mix the ingredients until just incorporated •Drop the dough onto a clean surface and knead a few times, just enough that the dough sticks together. Do not overwork the dough •Cut the dough in half •Add about three tablespoons of raspberry jam on one half and place the other half on top •Pat down and repeat the process one more time •Shape the dough into a circle and cut into 8 wedges. Place on a lined baking sheet and let set in the freezer for 15 minutes •Brush with heavy cream and sprinkle with sugar •Bake for 20-22 minutes or until slightly golden on top.
