Grilled Salmon and Quinoa Salad Ingredients: * 2 salmon fillets * 1 cup quinoa * 2 cups water * 1 lemon, juiced * 2 tbsp olive oil * 1 cup spinach * 1/2 cup cherry tomatoes, halved * 1/4 cup chopped cucumber * Salt and pepper to taste Instructions: 1. Rinse quinoa, then cook in a pot with water. Bring to boil, reduce heat, and simmer for 15 minutes. 2. Season salmon with salt, pepper, and half lemon juice. 3. Grill salmon on medium heat for 4-5 minutes per side. 4. In a bowl, combine cooked quinoa, spinach, tomatoes, cucumber, olive oil, and remaining lemon juice. Mix well. 5.
