Miyabi chef's knife - Japanese design

Miyabi chef's knives made in Seki, Japan. A scalpel-sharp blade is protected by 100 layers of stainless steel, forged into a Damascene pattern, that provide added durability. It's immersed in liq N2(nitrogen), a strengthening technique known as cryogenic tempering, & hand-finished in the Honbazuke 3-step method to give a polished edge; the Karelian birch handle offers a beautiful, easy-to-grip surface. Miyabi is owned by the famous cutlery manufacturer, Zwilling J.A. Henckels, Solingen, Germany.
