247K views · 16K reactions | Crispy braised chicken thighs with garlic, thyme, and Meyer lemon (inspired by @testkitchen). 🍗🧄🍋 Here's the original recipe (w/fennel & olives) 8 (5- to 7-ounce) bone-in chicken thighs, trimmed 1¼ teaspoons table salt ½ teaspoon pepper 1 tablespoon vegetable oil 1 small fennel bulb, 2 teaspoons fronds minced, stalks discarded, bulb halved, cored, and chopped fine ¼ teaspoon red pepper flakes 1 cup chicken broth ½ teaspoon grated orange zest plus 1 cup juice (2 oranges) 2 tablespoons Pernod 2 tablespoons lemon juice 2 teaspoons water 1½ teaspoons cornstarch 18 pitted Castelvetrano olives, cracked 1. Adjust oven rack to lower-middle position and heat oven to 325 degrees. Pat chicken dry with paper towels and sprinkle both sides with salt and pepper. Heat oil in 12-inch ovensafe skillet over medium heat until shimmering. Add chicken, skin side down, and cook, without moving it, until well browned, about 8 minutes. Using tongs, flip chicken and brown on second side, about 3 minutes. Transfer chicken to large plate. 2. Pour off all but 2 tablespoons fat from skillet. Add chopped fennel and red pepper flakes and cook, stirring frequently, until fennel is lightly browned, 4 to 5 minutes. Add broth, orange juice, and Pernod; bring to simmer, scraping up any browned bits. Return chicken to skillet, skin side up (skin will be above surface of liquid). Transfer skillet to oven and bake, uncovered, until chicken registers 195 degrees, 35 to 40 minutes. Whisk water and cornstarch together in small bowl; set aside. 3. Using tongs, transfer chicken to serving platter and tent with aluminum foil. Place skillet over high heat. Cook, occasionally scraping side of skillet to incorporate fond, until sauce is thickened and reduced to 1½ cups, 8 to 10 minutes. Adjust heat to medium-low. Whisk cornstarch mixture to recombine and then whisk into sauce and simmer until thickened, about 1 minute. Off heat, whisk in lemon juice, olives, and orange zest, and season with salt and pepper to taste. To that we're adding some can you see? Apple cider vinegar. This is two thirds of a cup. That's a strange combination. It is. And next we are using to make it even more strange some lemon lime soda. Ooh. And we need a quarter of a cup. Can hear it fizzing. I know. That is definitely a strange combination but that's okay. Two tablespoons of minced garlic. Wow. Tablespoons not teaspoons. I'm a little nervous about that. I know. That's a lot. You'll know why at the end. Two tablespoons of soy sauce. See if I can do this without making a mess. Two in a dash. And lastly, 1 teaspoon of pepper. And we're going to whisk away. Whisk away Karen. Now that our sauce is mixed up we have some boneless thighs. I have four thighs. You can also use breasts. And we're just going to lay them in the bottom of a crock pot that we've sprayed with cooking spray. Them all in there. Some are larger. That's okay. Yeah. This guy's a real big one. Hm. Okay. And real simple. We're just going to pour our sauce over top. Okay. Perfect. I'm going to grab this extra at the bottom. Look at all that garlic. I know. I wish you all could smell this right now. Oh my goodness. I know. I hope I can handle it. I hope garlic's in the name of this recipe because it should be. It is. Good guess. It's sweet garlic chicken today. Ooh. I know. We're going to cover and this is going to cook on high for hours or you can do low for six to eight. Alright, let's take a look. Smells good. Looks good. Oh, lots of garlic. I'll say. Oh, wow. That's just falling apart. So, we're going to take the chicken out and set it aside and then, our next step is going to be to thicken this sauce and we're going to do that at the stove once we get all this chicken out of here. So, we're making a slurry of two tablespoons of water, two tablespoons of cornstarch. We're going to stir it up. And add it to our sauce and then this sauce is going to boil. We want to bring it to a boil and that's going to cook for about two to 3 minutes. And then it'll be ready? And it should thicken if all goes well. Yeah. Now look how much that thickened up. It really did. Really nice. And obviously we're just pouring it right back over top of the chicken. Mmm. Looks good. Mm hmm. Smells good too. Okay, it's time to try our dinner. Mm. Looks good. And it is dinner time when we are tasting this. Mhm. Mhm. And I'm super hungry. Me too. It's so scaring. We're hoping it's good. Yeah I really hope it's good. There's a lot of garlic we saw floating around in there. Wow. We're just fine with me. I know it is. It's good? Hell yeah. Okay. Wow. Too much garlic for me? No. Oh. What? But the I mean the meat's super tender. Yeah it kept falling apart. Literally falling apart. As we were taking it out. Mhm. Falling apart and melting in my mouth. Seriously. That's good. Yeah no seriously. It's super good. A lot of flavor which I really like. So yeah I would say this is definitely a keeper for sure. Good and it was so easy. Mhm. Yep. Alright. Here it is. It's been running on and off today. I'm still recovering from strep. I just want something comforting. So we're going to use about three ribs of celery. Slice it in half. And then give it a nice chop. Like this big. Also every time I say I don't feel good. I always get a lot of comments saying oh my gosh she's pregnant. Y'all I'm not pregnant. I literally just have strep. Can we go back when it was rude to ask a woman if she was pregnant? Like a girl just can't be sick. One onion. I'm going to dice this up. Put the onions with the celery. Now two carrots. Slice it down middle. You get a chop. Carrots going in here. One shallot. I'm literally just using everything that I have leftovers from the holidays. Gonna also dice this cup. I have one spring of rosemary. I don't know why I didn't just use it when I was using it. But we're going to add one spring of rosemary. We're going to chop it up nice and finely. Few cloves of garlic. I'm doing three. Mince the garlic. Now before we assemble the soup we're going to prep the dumpling dough. One and a/ 4 cup of all purpose flour. A little pinch of salt. Some garlic powder. One teaspoon of baking powder. Mix this up. 2 tablespoons of butter. We're going to like crush this down with the flour. Just like smush the butter in between your fingers. Half a cup of milk. I'm using whole milk. Mix this up. And a fourth a cup of sour cream. Do like a half a cup of milk and then add like a tablespoon or another splash of milk because it was a little too dry. Now we're just going to add a good amount of chives. So now in a pot we're going to drizzle some oil. Give medium heat. Now we're going to add everything that we cut up but the garlic in there. Add some salt and pepper. Add salt and pepper as you go to. So once the onions are translucent then we'll add the garlic. Now add in the garlic Gonna let it cook for like two more minutes. Alright, we're making a robe. Don't stress me out. Just listen. Three tablespoons of butter. Once the butter's all melted, we're going to add three tablespoons of flour. We're going to mix it immediately. We're going to let it cook for two minutes on medium heat. After 2 minutes, we're going to move on to a whisk. One twelve ounce can of evaporated milk. Little at a time, just like the mac and cheese. Add in the last bit. Once it's all incorporated, we're going to add some chicken stock. We're going to start with 2 cups. Let this cook for like a minute. We're going to add two more cups. Now, we're going to add a shredded chicken. I have about two chicken breasts that shredded up. Add some extra from some buffalo chicken dip. After adding the chicken, I'm going to add one more cup of chicken stock so that's five cups total. We're going to add that rosemary, some dried thyme, smoked paprika of course, more salt and pepper, a little spoonful of chicken bouillon, mix this all up, cover it on medium for 10 minutes. Alright, it's been 10 minutes. So now we're going to add our dumplings. Gonna take two spoons or scooper if you have one. Like that and then just drop it in there. They're going to puff up. We're going to put the lid back for like another 15 minutes. The dumplings they puffed up and they got bigger. Now it's pretty much done. I'm just going to add some chives. You can add some parsley, any green stuff that you want. So here it is. Can I mix it up? Yes. On my bike. Smell real good. Good. I hit the spot. Really flavorful. I rated a nine. I rated a nine.
