Weekly Menu 5/12/19

Here's what our family is eating this week! I was so busy last week that I never did any meal planning! We didn't even go grocery shopping for the week until 5:30pm Sunday!! Needless to say, there was a lot of random meals thrown together last week & the week felt very chaotic! Sunday is Mother's Day & my dad's birthday so we're doing lunch with my family! I need to cook the chicken pot pie a froze a few months ago, so we'll probably have that for dinner so I don't have to cook!

Cheeseburger Soup Recipe
This Cheeseburger Soup recipe is a rich and cheesy bowl of comfort food made on the lighter side. It's quick and easy, loaded with turkey and potatoes in every bite!
Chicken Potpie
We LOVE this chicken pot pie recipe! And the best part? It makes TWO! So you have one to eat now and one to freeze for later!! Obviously this one isn't as healthy as most recipes I've shared, but it is still loaded with chicken and veggies! I do cut the butter wayyyyy (1 cup is A LOT of butter/fat!) down and use 2% milk and it still turns out great!
Cheese Stuffed Turkey Meatloaf Recipe
The best tasting, moist turkey meatloaf stuffed with cheddar cheese, spinach and rolled, jelly roll style topped with a ketchup based glaze.
Instant Pot Refried Beans - Easy & Healthy!
If you love the flavor of refried beans but would rather avoid the lard they are typically cooked in, you’ll love this easy, fat-free version made in the Instant Pot.
Breaded Pork Cutlets with Lime
Pork sirloin cutlets are a lean cut, and taste wonderful breaded and lightly pan fried. My family loves when I make them, and often request that I make them for dinner. A little different than chicken cutlets, these have more of a Latin flair, which we serve with fresh lime juice on top – yum!
