Tip: You can also freeze the pistachio butter in ice cube trays first, and then wrap cookie dough around it! Courtney Rich on Instagram: "I couldn’t wait… I’ll add this to the blog with grams and more details next week, but here’s my new recipe for Copycat Levain Bakery Lemon Cookies: 1 cup butter, cold and cut into cubes 3/4 cup granulated sugar 1/2 cup brown sugar, packed 2 tablespoons lemon zest 1 egg 1 egg yolk 2 teaspoons lemon extract 2 cups all purpose flour 1 1/4 cups cake flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 16 ounces white chocolate chips Preheat oven to 400 degrees F.
