Savory Roasted Acorn Squash
With a basement full of acorn squash - my hubby asked for something different - so I experiment and these #roasted morsels turned out fabulous. Ingredients • Acorn Squash • olive oil • salt • pepper • oregano • rosemary • thyme • garlic powder Peel, clean and cut acorn squash. I cut them into 1 inch-ish squares. Chop herbs, mix all ingredients with squash in a bowl and let sit for 15 minutes. Heat oven two 425 degrees. Make sure oven is completely hot. Spread squash on a cookie sheet with sides that has been sprayed with olive oil. Don't super crowd the pan, or you'll get steamed not baked squash. Cook for 20 minutes. Flip.
