In the period 1999-2008, the quince was grown on average on the area of 57,557 ha in the whole world, while the realized production was 442,747 t. In the world, in Europe as well as in the Republic of Serbia, there is a tendency of increasing of both the quince growing area and its production. Although the number of fruitful trees has been decreasing in the Republic of Serbia (the change rate is-1.04%), the quince production has been increasing by an average annual change rate of 1.99%. The overall investment value of the intensive quince plantation amounts 3,630 €/ha. The planting cost of 1,490€/ha accounts for the greatest part (41.1%) in the overall cost of setting up a quince plantation. The realized profit, calculated as the difference between the production value and the production cost, amounts 8,580€/ha.

The drying performed was convective using straw as the main source of heat. A relatively small dryer, favorable for family farm production, was used with a capacity of 400 kg of raw material per day. The duration of raspberry drying is 15 days, whereas the duration of fruit drying season amounts to 135 days a year. Fresh raspberries, as the main raw material, have the greatest impact on the production costs of dried raspberry, with a share of 63.7 %, followed by significant packaging costs (28.3 %), labor costs (4.73 %) and energy consumption costs (1.21 %). Such cost structure primarily results from using straw as the main energy source, inasmuch as straw is considerably less expensive than other available fuels. The analysis shows that in the 15-days production of dried raspberries is realized a profit of around 6,210 €, which can be considered as a very good financial result. Furthermore, the economics of production coefficient is 1.41 and the rate of production accumulation is 28.8 %.

Cumulative balances have been used as basic data sources. The agricultural enterprises' performance results compared with those of food industry companies. Over the period observed, there were between 1.330 (2003) and 1.677 (2007) agricultural entrprises operating in the Province of Vojvodina. In the same period, the number of the employed has reduced from 41.128 to 28.863 (reduction about 30%). The analysis of financial results shows that agricultural enterprises (in total) realized negative net financial result during the three first years. The rates of income on the gross invested capital are also very modest (-3,29-4,62%). The financial standing is characterized by extremely unfavourable financial balance, and its consequence is deep non-liquidity inside agricultural companies. The companies are missing about 29,8 billion dinars of long-term available resources only for the establishment of financial balance. The net capital value of agricultural company's has been enlarged for about 26%, and the real value of net capital has been decrease for 27,2 index points.

The properties which contribute most to the quality of fruit are: sensuous, organoleptic-especially ratio of sugar and acid, flavour and its significance and chemical-biological-content of vitamins, microelements and enzymes, as well as absence of pesticide residues. The quality of fruit depends both on favourable characteristics of fruits for satisfying physiological needs of human organism,on the one hand, and causing a significant level of pleasant feeling while being used, on the other hand. Bearing in mind the increasing demands set by the customers and international quality standards, the paper deals with economic aspects of the quality concept of agricultural-alimentary products, with special emphasize on fruit quality.

Farm economic viability was assessed using the opportunity costs of the main factors of production in agriculture (namely labour, land, and capital). The share of unpaid labour was found highest in the livestock farms specialising in milk production and grazing livestock. The farms specialising in permanent crops and horticulture had the largest share of their own utilized agricultural land, representing a very intensive type of farming usually organized on small acreages. The highest share of economically viable farms was recorded in the field crop farming system, followed by horticulture and permanent crops. In the viable group, the field crop farms were dominant with the largest coefficients of short-and long-term viability, which increased with the economic size of the farm. In general, the farms engaged in plant production exhibited much higher economic viability levels than the livestock farms (excluding the granivore farms). The most endangered were the farms specialising in grazing livestock, with the largest proportion of non-viable farms and the lowest coefficients of economic viability. A notable number of these farms lack economic justification for agriculture. However, ceasing agricultural production may not be the best solution for them, particularly as farms in remote rural areas are managed by elderly and low-skilled farmers.

It was analyzed and evaluated the most important economic indicators drying apples with combined technology (osmotic and convective drying). The calculations are based on real technical and technological norms for consumption and the current market prices of inputs and final products. In the structure of total costs, dominated by fresh apples (62.1%) and labor costs (20.5%), while energy costs are not particularly significant (3.6%). The results show that it is a very profitable production (profit 3558 € /22 days, production efficiency 1.60; production accumulation 37.4%). Investments in the construction of mini facility for for drying fruits are not large (about 30,900 €) and are repaid for about 2 years, which is very acceptable period for this type of production. With the proper state subsidies, building mini facility for drying fruit can significantly contribute to improving the economic situation of agricultural holdings, reducing unemployment and overall development of the village.

The drying performed was convective using straw as the main source of heat. A medium capacity dryer was used with a capacity of 400 kg of fresh blueberries per day, which is suitable for small family farms. The dryer would presumably be in operation for 135 days a year, of which a total of 15 days would be allocated for the drying of US blueberries. In the cost-price structure of dried blueberry production, fresh blueberries predominate as the basic raw material (77.03 %), followed by packaging costs (12.93 %), labour costs (6.13 %) and energy consumption costs (1.44 %). Supplanting straw with natural gas, as a much more favourable energy source, does not impede the costeffectiveness of this production. The analysis performed shows that a total of 15 days of effective blueberry drying yields a net profit of €4.040, which is a very good financial result. Furthermore, the efficiency ratio is 1.28 and the rate of capital accumulation is 22.05 %. The investment costs of dryer construction are not high (about €31,000) and can be covered in less than two years.

The aim of the research is to analyze and evaluate the influence of important factors on profitability of farms of different economic size. According to their economic size, farms are classified into four groups: very small, small-sized, mid-sized and large-sized farms. Factors influencing profitability are grouped into: production management, financial management, human resources management and subsidies and natural factors. The statistical technique used in the paper is a multiple regression model applied to determine statistically significant influence of certain factors on profitability. The results of the research show that equity turnover is the factor with the greatest positive impact on profitability of farms regardless of their economic size. Paid labour has the greatest negative impact on very small, small-sized and mid-sized...

Small-scale farms include farms with standard output value from 4,000 to 25,000 euros. The main aim of the paper is to determine and evaluate profitability and productivity of farms engaged in different types of farming. Economic viability of farms was determined based on profitability and productivity indicators. Although these indicators are not the only indicators of economic viability, they are most commonly used and the most reliable. The farms are divided into seven groups of farming: field crops, horticulture, vineyards and fruits, dairy production, livestock production – grazing livestock, granivores, mixed crops–livestock. The analysis was based on FADN data for a 5-year period (2015-2019). The number of farms in the sample was increasing over the years, reaching 1,655 in 2019, while a large number of them belonged to a class of small-scale farms (48.5%). Utilised a...
