The objectives of this study were to determine the phenolic profile and potential antioxidant act... more The objectives of this study were to determine the phenolic profile and potential antioxidant activity of Moringa oleifera leaves (MOL) cultivated in Saudi Arabia and to investigate the protective effect of moringa-based beverages on lipidemic and glycemic parameters in alloxan-induced diabetic rats (DR). The total phenolic content (TPC), chlorophylls, total carotenoids, total flavonoids, total flavonols, ascorbic acid content, and antioxidant activities (AOA) of MOL were determined and HPLC analysis of MOL was quantitatively performed. Moringa beverages as pure moringa (PM) and ginger-flavored moringa (GM) were given to diabetic rats (DR) at a dose of 1 mL 100 g-1 body weight/day for a successive six weeks. Glucose level (GL), lipid profile, and antioxidant parameters including malondialdehyde (MDA), reduced glutathione (GSH), and pancreas histopathological alterations were examined. Results indicated that MOL and prepared moringa-based beverages possess a suppressive amount of phenolics with considerable antioxidant activity in vitro. TPC was 78.72 mg GAE g-1 DW possess AOA as 36.33 μmol TE g-1 DW. Among the eleven identified phenolic acids and six flavonoids in MOL, caffeic acid and catechin were predominant and recorded 151.01 and 736.30 mg/100 g, respectively. Administration of PM or GM beverages significantly decreased GL and significantly improved serum lipid profiles in the DR group. Interestingly, oral administration of PM and GM beverages significantly attenuated the MDA and GSH levels in the DR compared to normal rats. Histopathologically, severe atrophy was noted in the islets of Langerhans in the DR group. However, after six weeks of oral administration of PM beverage, only mild atrophy was recorded in the islets of Langerhans, while with GM beverage, no histopathological alteration in the islets of Langerhans was found. The nutritional and biological evaluation of the moringa-based beverages revealed that both PM and GM beverages exhibit high antioxidant activity, possess antihyperglycemic and antihyperlipidemic effects, and alleviated alloxan-induced pancreatic damage in DR. Moringa could be recommended for diabetes and utilized for its great therapeutic benefits.

BPS and BPF are present in relatively high concentrations in different products, such as food products, personal care products, and sales receipts. Both BPS and BPF have similar structural and chemical properties to BPA; therefore, considerable scientific efforts have investigated the safety of their exposure. In this review, we summarize the findings of relevant epidemiological studies investigating the association between urinary concentrations of BPS and/or BPF with the incidence of obesity or diabetes. The results showed that BPS and BPF were detected in many urinary samples at median concentrations ranging from 0.03 to 0.4 µg·L−1. Al-Qassim is superabundant date fruits production in kingdom of Saudi Arabia (KSA); considers the... more Al-Qassim is superabundant date fruits production in kingdom of Saudi Arabia (KSA); considers the plentiful region for producing date syrup resulting in massive amounts of crude date fibers (DFs). Current study aimed to valorizes powdered DFs usage by formulating biscuits with different DFs levels (5, 10 & 15%). Chemical compositions, antioxidant activity and total phenolic levels as well as physical and microbiological properties for dough and DFs were evaluated. The quality attributes (physical, texture, microbiological and sensory traits) of formulated biscuits were evaluated. The magnesium was the highest element in DFs powder (124.40 mg/100g) followed by potassium (30.39 mg/100g). Biscuits formulated with 5% DFs had the lowest water activity a w (0.354; P ≤ 0.05) that was increased with 15% DFs. Increasing the DFs substitution level increased the darkness of biscuit crust color. Biscuits with 5% DFs addition showed the lowest total phenolic, scavenging activity (7.82 mg GAE/g & 9.59% respectively) and hardness (17.28). Date fruits had the lowest total viable count (TVC; 4.6 log cfu/g) while Salmonella and E.coli were totally absent. In conclusion, the powdered DFs significantly improved overall acceptability of formulated biscuits at levels up-to 10% and could be recommended for marketplace.

The research has been carried out in two successive stages. Firstly, the highest phenolic content and antioxidant activity of L. culinaris sprouts were assessed at 20 ± 1°C and 90–93% RH during sprouting. Total phenolic content (TPC), total carotenoids (TC), total flavonoids (TF), total flavonols (TFL), DPPH-RSA, and vitamin C contents of L. culinaris seeds and 6-days sprouts were determined. The current study examined the effects of intermittent fasting (IF), fermented camel milk (FCM), and fermented camel milk incorporating 10% Sukkari date (FCM-D) on weight loss, blood profile, and antioxidant status in obese rats for 6 weeks. Subsequently, leptin and adiponectin levels and histopathological examination of adipose tissue were carried out. Results showed that IF with FCM or FCM-D decreased body weight by 0.92 and −5.45%, respectively. IF alone lowered non-fasting blood glucose (NFBG) and fasting blood glucose FBG after 6 weeks, whereas adding FCM or FCM-D reduced NFBG after 4 weeks. Intermittently fasting obese rats given FCM or FCM-D had the lowest blood glucose levels (BGL). A cyclophosphamide-induced immunosuppression rat model consisting of six experimental groups was carried out to study the effects of TCM and FTCM on weight gain, antioxidant status, immunoglobulin (Igs), pro-inflammatory and anti-inflammatory cytokines, and oxidative stress biomarkers. TCM or FTCM were orally administrated at 10 or 20 mL Kg−1 rat weight to CYP-immunosuppressed rats for 2 weeks in the presence of negative (NR) and positive (CYP) control groups. Therefore, the study aimed to combine the benefits of fermented camel milk (FCM) and Sukkari date (SKD) in a naturally sweetened FCM. Six treatments of FCM using ABT-5 cultures with 0, 5, 7.5, 10, 12.5, and 15% SKD were carried out. Chemical, physicochemical, rheological properties were studied, while organoleptical attributes and probiotic strains viability were monitored during cold storage (4 °C) up to 15 days. Results showed that fortification with SKD increased total solids (TS), ash, dietary fiber, and carbohydrate content compared to plain FCM. Water holding capacity (WHC) values increased with low and medium SKD levels then decreased with high SKD levels. This study tracks changes in the polyphenol composition of red quinoa (RQ) and yellow quinoa (YQ) seeds during germination. The antioxidant bioactivity of raw and germinated seed was also determined in vitro. Phenolic acids and their derivatives and flavonoids were identified by using HPLC-DAD and quantified after 0, 3, and 6 days of germination. Subsequently, the extracts of 6-day-old quinoa sprouts were prepared to biologically evaluate their functional properties against CCl4-induced oxidative stress in rats.
