A brief journey from its origins, through its interval folklorization, reaching its maximum importance in the oral tradition as a fundamental element of cultural identity in most spanish speaking countries. This seeks to raise awareness among individuals and private and official institutions, which organized parades on the urgent need for action to teach it and to multiply by opening it spaces in these events and disseminate it to recognize the value it deserves and release them from the stigma of undervaluation that has been debated
According to the evidence, there is a need for more thorough assessment and quantification of bod... more According to the evidence, there is a need for more thorough assessment and quantification of body size and shape and the risk of breast cancer. Using the somatotype methodology, we carried out an original research in order to explore possible associations between body shape and the risk of breast cancer in Uruguayan women. With this objective, 254 recent breast cancer cases and 1,000 frequency-matched healthy controls were interviewed on menstrual and reproductive story, and a series of skinfolds, circumferences and diameters were measured specifically to calculate somatotype. A positive association with breast cancer was found for high endomorphy (Odds Ratio [OR] = 2.82, p < 0.001), mainly among pre-menopausal women (OR = 4.98, p <0.001) and normoweight women (OR = 5.12, p = 0.002), whereas almost no differences were observed for mesomorphic and ectomorphic women. An approach to classify potato chips using pattern recognition from color digital images consists... more An approach to classify potato chips using pattern recognition from color digital images consists of 5 steps: (1) image acquisition, (2) preprocessing, (3) segmentation, (4) feature extraction, and (5) classification. Ten chips prepared for each of the following 6 conditions were examined: 2 pretreatments (blanched and unblanched) at 3 temperatures (120°C, 150°C, and 180°C). More than 1500 features were extracted from each of the 60 images. Finally, 11 features were selected according to their classification attributes. Seven different classification cases (for example, classification of the 6 classes or distinction between blanched and unblanched samples) were analyzed using the selected features. Although samples were highly heterogeneous, using a simple classifier and a small number of features, it was possible to obtain a good performance value in all cases: classification of the 6 classes was in the confidence interval between 78% and 89% with a probability of 95%.

Although there are different color spaces, the most used of these in the measuring of color in food is the L*a*b* color space due to the uniform distribution of colors, and because it is very close to human perception of color. In order to carry out a digital image analysis in food, it is necessary to know the color measure of each pixel on the surface of the food item. However, there are at present no commercial L*a*b* color measures in pixels available because the existing commercial colorimeters generally measure small, non-representative areas of a few square centimeters.
