The bla ckberry sample was o btained from a crop, a nd the blueberr y from wild plants; thr ee stages o f ripening were studied where the anthocyanin accumulated as the fruit ripene d. Furthermore in the blackberr y antioxidant properties remained constant while there were significant increases in the blueberry. The flavor profile of each state was also evaluated and it was concluded that it is possible to diffe rentiate the state of the crop among two others. The effects of pulping were asse ssed with a f ocus on th e antioxidant properties of these fruit during the harvest stage. The behavioural effects depend on the sample and the conditions of the process.
