Here, we tested this technique to detect variations in carbon and nitrogen isotopic ratios (δ13C and δ15N) in two different intrasexual competition scenarios of male Iberian red deer (Cervus elaphus hispanicus) using faeces of individuals collected during hunting actions in South-eastern Spain. The carbon isotopic ratio (δ13C) was not found to be significant, likely due to similar diet composition in all individuals. However, the nitrogen isotopic ratio (δ15N) was found to be lower in populations where sexual competition between males during the rut was higher compared to low-competition populations. Therefore, this study suggests a different use of proteins by an individual male red deer depending on the sexually competitive context in which he lives. The beneficial properties associated with garlic consumption have been related to the presence of... more The beneficial properties associated with garlic consumption have been related to the presence of bioactive compounds including (poly)phenols and organosulfur compounds (OSCs). This study aims to assess the effect of in vitro colonic fermentation on fresh and black garlic by determining the transformation of these compounds through ultrahigh-performance liquid chromatography coupled to mass spectrometry with a linear ion trap (uHPLC-LIT-MS). Colonic fermentation had a similar influence on the phenolic content of fresh and black garlic, with total respective decreases of 43.8% and 41.7%. Meanwhile, fermentation resulted in a significant decrease (33%) in OSCs in black garlic. Compounds such as 4-hydroxybenzoic acid, S-allylcysteine (SAC), and methionine sulfoxide were the phenolic compounds and OSCs with the highest concentration in fresh and black garlic after the in vitro fermentation. These compounds, potentially present at the colonic level, might be responsible for the systemic health benefits associated with the consumption of black and fresh garlic.

This work assays overall fruit quality information in order to ascertain the optimal harvest timing of three late-season orange cultivars (‘Barberina’, ‘Valencia Midknight’ and ‘Valencia Delta Seedless’) during two consecutive growing seasons. Thus, morphological and physicochemical parameters, organic acids, polyphenolic content and antioxidant activity (ABTS and DPPH) were analyzed. ‘Barberina’ yielded the highest morphological (large and heavy fruits, albeit with lower fruit color index) and physicochemical (high juice content and intermediate but optimal acidity) fruit quality, with April providing the optimal harvest timing. Spain is the second largest European producer of oranges and the fourth in the world. Moreover, i... more Spain is the second largest European producer of oranges and the fourth in the world. Moreover, in Andalusia, the land dedicated to organic farming of oranges has doubled in the last decade (2006-2016). The great challenge in the organic farming sector is to find a reliable analytical technique (or a set thereof) to verify that the method of production followed the organic production guidelines. A new methodology based on stable isotopes, (poly)phenol profiling and conventional quality data in the edible and non-edible parts of the oranges was developed using data fusion techniques. This system allowed authenticating organic fresh oranges. The application of a low level data fusion and a non-linear algorithm (k-nearest neighbors), obtained 100% specificity and sensitivity in the test set models. This work presented a new focus on dealing with the problem of the authentication of fruits grown under organic farming techniques.

The method was validated for specificity, linearity, limit of detection (LD) and quantification (LQ), intra-day and inter-day precision, recovery and matrix effects, which were determined for 34 compounds in the three biological matrices. After method validation, three parent flavan-3-ols, four 5-carbon side chain ring fission metabolites, and 27 phenolic acid and aromatic catabolites were quantified in plasma, urine and feces after red wine proanthocyanidin intake. Demand for and availability of blueberries has increased substantially over recent years, driven ... more Demand for and availability of blueberries has increased substantially over recent years, driven in part by their health-promoting properties. Three blueberry varieties ('Rocío', V2, and V3) were grown under two cultivation systems (open-field and plastic tunnels) and subjected to two irrigations regimes (100% and 80% of crop evapotranspiration) in two consecutive years (2011-2012). They were evaluated for their phytochemical composition and antioxidant capacity. Genotype influenced the antioxidant capacity and the content of the three groups of phenolics in the blueberries. The antioxidant activity and total flavonols content increased when the blueberries were grown under open-field conditions. Deficit irrigation conditions led to additional positive effects on their phenolics (delphinidn-3-acetilhexoside content was increased under plastic tunnel with deficit irrigation). In conclusion, the amount of phenolic compounds and the antioxidant capacity of blueberries were not negatively affected by water restriction; Moreover, several changes were recorded due to growing system and genotype.

Different nitrogen inputs and/or development under adverse water conditions (water stress/low qua... more Different nitrogen inputs and/or development under adverse water conditions (water stress/low quality and/or high salinity/electrical conductivity), such as those prevailing in Almeria (Mediterranean coast, south-east Spain), may affect overall fruit and vegetable quality. This study evaluated the influence of salinity and nitrogen reduction in hydroponic nutrient solution on strawberry fruit quality and nutritional compounds (Fragaria × ananassa Duch., cv. Primoris). Strawberries obtained under salinity treatments recorded the highest values for soluble solids content (SSC; all samplings); fruit taste was thus enhanced. Additionally, salinity improved fruit nutritional value, with higher contents of antioxidants compounds (first sampling). During first and second samplings, strawberries grown under N reduction and non-saline conditions showed higher values for firmness compared to fruits developed under other treatments.
