Os... more Uvod i cilj rada: Kuhinjska sol ili natrij klorid nezaobilazni je dodatak gotovo svakoj hrani. Osim sto doprinosi boljem okusu hrane, neophodna je za njegovo normalno funkcioniranje jer sudjeluje u mnogim fizioloskim procesima. Preveliki unos soli utjece negativno na rad krvnožilnog sustava, bubrega, te na niz raznih procesa u organizmu. Veliki broj namirnica sadrže u svom sastavu određenu kolicinu soli na koju sami ne možemo utjecati, stoga je cilj ovoga rada bio utvrdi kolicinu soli prisutnu u pojedinim vrstama hrane a koja se svakodnevno koristi u prehrani, osobito djece i mladih. Materijal i metode: Ukupno je analizirano 54 uzoraka hrane podijeljenih u cetiri skupine: mlijeko i proizvodi od mlijeka, pekarski proizvodi, orasasti proizvodi i snack proizvodi. Does this sentiment embraces the authenticity? The European Commission organized in 2015 a control plan coordinated at European Union level to assess the prevalence on the market of honey adulterated with sugars and honeys mislabelled with regard to their botanical source or geographical origin. Results from Croatia were interesting regarding both, quality and authenticity, so there is need to do some more investigation on that matter. Recently, problems have been also identified with fish and horse meat, herbs and spices, wine, vegetable oils and dairy products, amongst others. Should food business operators implement some new rapid methods for detection, are the official laboratories sufficiently equipped and are inspectors trained enough? Certainly there is a need to establish fingerprint of each authentic foodstuff, and solid cooperation of regional laboratories to improve the control of raw materials and ready to eat f...
Muscle, kidney, adipose tissue and brain samples from 4 male and 4 female mice group were taken f... more Muscle, kidney, adipose tissue and brain samples from 4 male and 4 female mice group were taken for residue pesticide analysis. The organs were pooled and prepared by the modified QuEChERS method for analysis of imazalil residues by the GC-MS technique. All samples were prepared in the same way, as follows: 1 g of sample was homogenized in a mortar with 10 ml of ACN. The sample was transferred in falcon tube adding the 4 mg MgSO4, 1 g NaCl, 1 g trisodium citrate dehydrate and 0.5 g disodium hydrogen sesquihydrate to the sample. The sample thus prepared is centrifuged for 5 min at 3500 rpm. The sample was frozen overnight to remove fats. Aliquot of the prepared sample is taken for further procedure. The sample was clean up with Supel QuE Z-Sep+ .
Zahvaljujuci porastu ocekivanog trajanja života u vecini zemalja svijeta doslo je do povecanja ud... more Zahvaljujuci porastu ocekivanog trajanja života u vecini zemalja svijeta doslo je do povecanja udjela starijih osoba u cjelokupnoj populaciji. Prema procjenama SZO-a, do 2025. g. broj starijih ljudi (60 i vise godina) u svijetu dosegnut ce 1.2 milijardu, a Europa ce i dalje ostati podrucje s najstarijim stanovnistvom. U skupini deset najstarijih zemalja svijeta je i Hrvatska s ocekivanim trajanjem života od 78, 4 godina za žene i 71, 2 godine za muskarce (2002. g.). Populacija starijih ima znacajan rizik za nastanak zdravstvenih problema povezanih s nacinom prehrane, ukljucujuci kardiovaskularne bolesti, maligna oosteoporozu, oslabljeni imunitet i ostecenje kognitivnih funkcija. Biogenic amines are organic bases alifatic, aromatic or heterocyclic. In wine they are created by... more Biogenic amines are organic bases alifatic, aromatic or heterocyclic. In wine they are created by yeasts during fermentation, by lactic acid bacteria during malolactic fermentation and during maturation of wine. Biogenic amines are produced by enzymatic decarboxylation of amino acids. The most common amines in wine are cadaverine, putrescine, histamine and tyramine accordingly determined by the following amino acids: ornithine, lysine, histidine and tyrosine. Potential factors that influence the occurrence of amines in wine are as follows: pH, SO2, the presence of precursor amino acids, presence of decarboxylase-positive microorganisms, length of fermentation phase, spontaneous malolactic fermentation, the turbidity of wine ripening. Aim. To perform research of lead, cadmium, arsenic, mercury, chromium, nickel and zinc burden on ... more Aim. To perform research of lead, cadmium, arsenic, mercury, chromium, nickel and zinc burden on 14 vitamins or herbal preparations in order to estimate potential toxicity based on maximum possible bioaccumulation. Methods. Following microwave digestion (sample + 5 ml 65% HNO3 and 1 ml H2O2 ; 20 minutes), metals and metalloids were determined by atomic absorption spectrometry (AAS): for concentration determination graphite furnace AAS (Pb, Cd, Cr and Ni), flame AAS (Zn), quartz-tube AAS (As), and cold vapour AAS (Hg) were used. Results. Analysis results showed that the preparations contained lead ranging 0.50-3.86 mg/kg (5 samples), cadmium 0.12 mg/kg (1 sample), arsenic 0.10-0.19 mg/kg (3 samples), mercury 0.04-0.12 mg/kg (14 samples), chromium 0.42-64.38 mg/kg (10 samples), nickel 0.67-338.90 mg/kg (12 samples), and zinc 2.44-95.30 mg/kg (7 samples), counted on total preparation weight as the mean of three determinations.
