ABSTRACT Rising consumer concern over intensive food production issues has resulted in an increas... more ABSTRACT Rising consumer concern over intensive food production issues has resulted in an increase in demand for organic alternatives to a wide variety of foods including fruit and vegetables, meat and poultry. More recently, there has also been considerable interest in the marketing of more environmentally-friendly supplies of fish, including those from farmed production systems. 'Organic' salmon has featured in the forefront of this market innovation, although it is arguably more problematic to apply traditional organic principles to salmon production. The term 'organic salmon' contains at least three different components - animal welfare, chemical use and sustainability, the most controversial issue being animal welfare. Of fundamental importance is the extent to which this term can usefully be applied to salmon and, more importantly the extent to which consumers perceive animal welfare to be an important issue in salmon farming. This paper reports on some results based upon consumer focus groups in 5 countries (France, Germany, Norway, Spain and UK) and considers a number of issues relating to fish welfare and organic salmon production more generally. As the food market continues its seemingly relentless march to greener pastures it is suggested that this study may help identify some implications for future aquatic f ood product development decisions.

Within the French fish farming sector, both in the freshwater sector (trout, carps) and in the ma... more Within the French fish farming sector, both in the freshwater sector (trout, carps) and in the marine sector (seabass, seabream, turbot), during the last years have emerged a number of quality schemes. These quality schemes show various forms (national charters with third part certification, standard, official quality labels, private certification, collective trademarks), they correspond to various levels of constraints in the specifications, and they have been initiated by diverse types of operators (producers, processors, distributors), as individuals or groups.Using the results of interviews of operators in the supply chain for the different sectors, we analyse the effects of the setting up of quality schemes, for the enterprises (production, processing), for the collective organization, and for the product enhancement. In the enterprises, the importance of induced changes varies greatly depending on their initial situation, the main changes being brought by setting traceability. In the case of collective quality schemes, an overall improvement of quality is recognized by the actors, but the expectations by the producers of a premium is hardly satisfied, in the present organization of the chain. At present, the small number of companies officially certified for labels show generally good results, but those can hardly be generalised.The study gives opportunity to analyse the construction of quality schemes regarding to the collective professional organization and the supply chain organization, and to discuss the use of collective quality schemes as tools for a general improvement of farming and processing.

RESUME ; Les installations conchylicoles surelevees ou suspendues sont utilisees en France pour l... more RESUME ; Les installations conchylicoles surelevees ou suspendues sont utilisees en France pour la mytiliculture (bouchots, tables) ou l'ostreiculture (tables) et au Japon pour l'ostreiculture (radeaux). Devant la necessite d'augmenter la production et de limiter l'extension geographique des concessions, ce type d'installations s'est fortement developpe. Grâce a cette meilleure utilisation de l'espace marin (la repartition se fait sur un volume et non plus sur une surface), les densites de mollusques cultives par metre carre sont plus importantes. ; L'augmentation de biomasse provoque, par l'intermediaire de la biodeposition, des quantites croissantes d'apports vers le sediment. Ces accumulations riches en matieres organiques modifient les proprietes physiques et la biogeochimie des sediments. Ainsi, les changements de la morphologie des fonds par la formation de buttes ou de chenaux modifient la circulation des eaux. De meme, les relargages de substances comme l'hydrogene sulfure ou l'ammoniaque sont fortement augmentes par l'intermediaire des eaux interstitielles. Ces phenomenes sont surtout observes dans les zones non-decouvrantes. ; La deterioration de la qualite des terrains conchylicoles se traduit par un ralentissement de la croissance, un moindre engraissement, et parfois une mortalite des animaux. Cela signifie pour l'eleveur, une perte du cheptel, un allongement du cycle d'elevage, une baisse de la qualite du produit. ; On constate que la relation entre le probleme biogeochimique de deterioration des sols et sa prise en compte dans le systeme d'elevage depend etroitement du contexte economique de la production. On peut distinguer les tendances suivantes : en France, la remuneration de la qualite du produit a la vente incite au niveau individuel a l'adoption de mesures de lutte contre la deterioration des sols. En revanche, au Japon, l'existence d'une organisation collective forte favorise la concertation entre professionnels et la mise en place de mesures generales, sans emprunter la voie reglementaire. ; Differentes techniques sont envisagees pour remedier a ce probleme : deplacement des installations, jachere, labour des sols, diminution de la densite d'elevage. L'amelioration de rentabilite obtenue par la pratique de ces techniques implique aussi une augmentation du temps de travail.

The intent of the proposed system was to develop an insitu biotreatment system for swine manure t... more The intent of the proposed system was to develop an insitu biotreatment system for swine manure that should involve minimum handling by the farmer. A demonstration plant has been installed in the Paris region. The intensive lagooning system consists of algal ponds, daphnid ponds and a polishing fish pond working in series with a total area of 2100 m 2 and a total volume of 3600 m ~. The performance of the system was evaluated under winter conditions with raw decanted swine manure by measuring N-NH; and P-PO~-removal, pH, temperature, water oxygen, algal biomass and daphnid productions. Results showed that low temperatures (< 5°C) did not allow any significant biomass production (0.41-t~68 g dry mass~m-' d). Ammonia-nitrogen, mostly stripped (98% lost by stripping), and phosphate removals were small. However, as soon as the temperature increased in spring (March), ammonia-nitrogen removal was improved with a large contribution (71%) due to stripping and the algal productivity increased to-~ 3"5 g dry mass/m e d; CO: appeared to be a limiting factor. Ammonia-nitrogen, nitrate, nitrite and orthophosphate showed marked variations that could be correlated with manure overdoses.

In France, the absence of further development of marine fish farming over the last 20 years has b... more In France, the absence of further development of marine fish farming over the last 20 years has been attributed to regulatory constraints, and to the difficult access to new farming sites, due to high competition between different uses in the coastal zone, and to the shortcomings of governance in these areas. The regional schemes for the development of marine aquaculture (SRDAM) were introduced by the French Law on modernization of agriculture and fisheries (LMAP, July 27, 2010). The goals of SRDAMs are to make an inventory of existing aquaculture sites and to identify potential sites suitable for aquaculture, and to conciliate the development of marine aquaculture with other coastal activities. They are expected to allow access to new fish farming sites. Our study focuses on the three SRDAMs on French Mediterranean coast, in order to investigate to which extent the SRDAMs offer opportunities for a new development of marine fish farming, in line with the quantified objectives of the French national strategic plan for the development of sustainable aquaculture. Based on desk work and on enquiries with professional representatives, administration, and experts, our study aims to analyze the building process and the results of SRDAMs and discusses the constraints to an extension of marine fish farming.

L'objectif etait d'essayer de comprendre sur quels arguments se fondent les professionnel... more L'objectif etait d'essayer de comprendre sur quels arguments se fondent les professionnels qui ont diverses attitudes vis-a vis d'evolutions techniques, ici notamment l'utilisation du naissain d'ecloserie, ces pratiques pouvant s'apparenter a une "intensification". Ce type de question delicate mais largement rencontree en agriculture peut etre utilement eclairee par une enquete sociologique. C'est pourquoi ce travail a ete co-encadre par Mesdames Claude Wisner-Bourgegois, maitre de conference de sociologie, et Cathernie Mariojouls, professeur d'aquaculture. Nous avons enquete aupres de dix ostreiculteurs morbihannais et avons egalement rencontre l'IFREMER La Trinite, ce qui a permis une prise de recul.
