Ruby on Instagram: "20 min laksa curry noodle soup 🍜❤️ I had the most amazing laksa recently and wanted to recreate it but wasn’t feeling well, all recipes seemed really long so I cheated and bought a curry paste - which is so much quicker and tastes just as good 💌 Serves 2 2 tbsp laksa paste or any curry paste 1 tin coconut milk 500ml veg stock 200g tofu (or any protein you like) 1 tbsp soy sauce 1 tbsp olive oil 1 pak choi 2 nests noodles (I used flower petal) 150g mushrooms 1 tin sweetcorn Optional toppings: spring onion, coriander, lime & dried chilli oil 1. To make the broth, add curry paste, coconut milk and stock to a pan. Ingredients: 2 bulbs garlic 1 spaghetti squash ¼ cup + ½ tbsp olive oil ¼ cup grated Parmigiano Reggiano 1 tsp lemon juice ¾ tsp salt 3 tbsp low fat milk ½ cup low fat cottage cheese ½ cup panko breadcrumbs 2 tbsp dried parsley ½ tsp onion powder Instruction: -Preheat the oven to 400F -Cut the top off of each bulb so that just the tops of the cloves are exposed. In this case, it’s very finely shaved fennel, wafer thin slices of pear and crunchy roasted walnuts all tossed together with the before-mentioned quad of deliciousness: olive oil, salt, lemon, Parmesan. Oh and actually I also added a whack of black pepper too! No specific recipe as such with this one but they key is to get the pear and fennel really fine. Always roast the nuts. Don’t hold back on any of the dressing elements and always taste to make sure it’s well balanced. Enjoy!"
