People's way of life is being formed under influence of the geographical, ecological, political, ... more People's way of life is being formed under influence of the geographical, ecological, political, cultural and religious environment and it is about the characteristics of the population in certain region, place and time. The health of one's person, the physical, social and mental well-being are under influenced by the lifestyle. The way of living, working and functioning can be a reason for development of a certain conditions called illness of the lifestyle. They include: obesity, heart diseases, diabetes, cancer etc. These illnesses usually develop slowly and if timely intervention is made, through changing the habits that decrease the exposure of potential risk factors, can prevent or delay the beginning of the disease. Main risk factors for development of insulin resistance and diabetes are nutrition and lifestyle habits. On the other hand, they are also main tools that can help in prevention and improvement of the condition. This research assesses the influence of certain risk factors and quality of the lifestyle in people with insulin resistance that have increased body mass. It is chosen a group of 175 people, from which 103 are women and 73 men, aged above 25 years, and have increased body mass index (BMI) (BMI>25 kg/m 2) and have hyperinsulinemia. A statistically significant difference was determined (p˂0,028), between BMI and HOMA-IR. Most of them have a sedentary lifestyle. From the group that is in employment (69 people), the work isn't related to physical activity. Most often, they practice walking as an additional physical activity, once or twice a week, in duration of 30 to 45 minutes. Biggest part of the people in the selected group (118 people), have regular sleep-in duration of one day. Professional support with instructions for a hygienic-diet regimen that would reduce body mass, education for nutrition and changing of lifestyle habits are needed, to achieve timely prevention and decrease of the insulin resistance, and with that to stop or to delay its progression towards diabetes.

As well as being consumed as fresh fruit, apples are also used as a raw material which is processed in the production of a variety of products. In the Republic of Macedonia, apples represent the main fruit species and are mostly cultivated in the Resen region. In Apple cultivation producers face various diseases and pests that cause damage to apples which necessitates the introduction of preventive measures that include the use of pesticides. As pesticide residues and their metabolites may be a potential hazard to human health, the primary concern is to determine their presence in order to avoid the potential risk to human health. The aim of this stady was to assess the oxidative stability of refined sunflower oil both at room... more The aim of this stady was to assess the oxidative stability of refined sunflower oil both at room temperature and during conventional frying in a pan. For this purpose, the refined sunflower oil was heated for 10 minutes in a fryer pan. Under these conditions, the Wheeler method was used to determine the peroxide number. Oven test was used to determine the oil stability. Peroxide number of the oil fried from 0 to 10 minutes at a temperature from 27ºC to 200ºC continuously increases from 0.357 mmol/kg to 6.4762 mmol/kg. Peroxide number of the oil analyzed by the Oven test increased from 2.41 mmol/kg for 24 hours to the value of 16.67 mmol/kg for 96 hours. The oil that has been fried for 10 minutes and reached a temperature of 200ºC should not be used as food. The oil which is kept in an open bottle at room temperature can be used up to 24 days.

The aim of this paper is to analyze the effect of replacing part of wheat flour (4, 8, 16, 24 and... more The aim of this paper is to analyze the effect of replacing part of wheat flour (4, 8, 16, 24 and 32% for cookies and 4, 6, 8 and 10% for sponge cake) and to measure influence on the color of the cookies and the sponge cake with apple skin powder and grape pomace powder, respectively. The cookies were produced according to the AACC 10-50D method with some modifications, and the sponge cake was produced according to the method presented by Velioğlu et al., 2017 with some modifications. Digital image analysis and colorimeter were used to determine the colour change of the samples. Results show that by increasing food by-products (apple skin powder and grape pomace powder), the colour difference between the control sample and other samples was bigger. The colour of the sample measured by digital image analysis covers the entire sample and is more representative and more objective regarding colour measurement.
Nutritional quality of strawberries comes mostly due to the large amount of containing vitamin C.... more Nutritional quality of strawberries comes mostly due to the large amount of containing vitamin C. There is a need of proper strawberry storage to preserve the high amount of vitamin C. Vitamin C was determined by the Tillmans method in strawberries stored at: room temperature, temperature of 4 0C (cooling) and at temperature of -18 0C (freezing). The storage was up to 11 days. Results were processed with ttest and after statistical processing we calculated the Pearson’s correlation coefficient. In all three storage conditions there is a reduction of vitamin C amount. The amount of vitamin C in fresh strawberries is 60.85 mg/100 g and after 5 days it is only 7.57 mg/100 g for the strawberries stored at room temperature, 43.30 mg/100 g for the strawberries stored under cooling conditions and 44.54 mg/100 g for the frozen strawberries. After 11 days, there is almost no vitamin C (0.55 mg/100 g) in the strawberries stored at room temperature, the amount of vitamin C in the frozen strawberries was 28.21 mg/100 g, and in the cooling strawberries there was the highest amount of vitamin C that achieved 37.92 mg/100 g. For strawberries stored at room temperature and for freezing strawberries there is the highest value for Pearson’s correlation coefficient and r = 0.93871402. This coefficient it is lower for cooled strawberries and freezing strawberries, r = 0.887226935. Vitamin C reduces differently in strawberries stored in different conditions. Until the fifth day, the tendency of vitamin C reduction is the smallest for the frozen strawberries, and after the fifth day it is the smallest for the cooling strawberries.

Chlorpiryfos analysis of the apples is performed by liquid chromatography-tandem mass spectrometry (LC-MS/MS) followed by an extraction/separation cleansing with acetonitrile and the dispersive SPE-QuEChERS-method. The results are compared with the maximum residue levels (MRL) prescribed by the legislation of the Republic of Macedonia. From them comes the red, blue and purple color of fruit. Anthocyanins are very easily degraded by heat treatment, which can have a major impact on the color quality and nutritional characteristics of the finished product. In order to determine how the heat treatment affects the content of the anthocyanins, jams were produced from peach and two varieties of raspberry. The jams were produced by boiling the prepared fruits, in open stainless steel vats on direct fire, under atmospheric pressure, temperature of ≈ 100 °C, for a period of 15 minutes. As sweeteners were used: sucrose, fructose, sorbitol and agave syrup. The analysis of anthocyanins was carried out on fresh fruits and obtained jams (spectrophotometrically at pH differential method with UV-Vis spectrophotometer). Cold pressed oil is unrefined sunflower oil which has greater nutritional properties, but oxidizes much faster and at lower temperatures than refined oil. There were analyzed two sunflower oils: cold pressed sunflower oil "Fila" and refined sunflower oil "Kristal". Oils were analyzed in accordance to the Oils Rules and fats and oils quality. Iodine, peroxide and acid number in the two oil types were determined. Iodine and peroxide number were determined by ISO 3961: 1996 while the acid number was determined by ISO 660: 39, 2009. Iodine number of refined oil is 127 and it is higher than the iodine number of cold pressed oil which is 86. Peroxide and acid number are indicators for the oil oxidation and they are almost five times higher in cold strained oil than in refined oil. A survey of 120 respondents at different age and different education level, was conducted to evaluate the population awareness in Pelagonia, Republic of Macedonia. The questions were divided into four groups. The first set of questions was whether and how often they have used artificial sweeteners, while the second was why and when have they used them. But today's production of apples cannot be imagined without chemical treatment. In addition to its favorable health effects, it may also have adverse effects on human health due to the presence of pesticides that are considered as contaminants. The purpose of this research is to evaluate the fungicide residues in fruit/apples. The fungicide residues were extracted from apple cultivar Idared with QuEChERS method and analyzed by ultra-performance liquid chromatography with a triple quadrupole mass spectrometer (UPLC-TQ/MS). From a nutritious aspect yogurt is very similar to the milk from which it was made, partly changed, with certain therapeutic effects linked with the starter cultures added in the production process. The research includes the examination and presentation of results for the physical-chemical composition, the inhibitory substances and the hygienic quality of the raw milk for yogurt production, the technology, the physical-chemical composition and the microbiological quality of the yogurt. According to the results obtained from the research, the milk fat content amounts to 3.78%, proteins 3.23%, lactose 4.68%, and dry matter 12.76%. The average number of somatic cells in the milk is 248.400/ml, and the total number of bacteria 199.000/ml. No antibiotics had been detected in the milk, and the content of aflatoxins is 0.010μg/kg.
