1.4M views · 39K reactions | Upside Down Courgette & Lemon Ricotta Filo Tart Welcome back to Cooking Upside Down and today we’re slicing thin ribbons of courgettes and layering them onto a baking sheet seasoned with oil, salt and pepper, lemon thyme and lemon zest.I’m attempting a woven pattern as I think it will look nice and then slathering the top with creamy ricotta which is seasoned with more salt, pepper and lemon zest.I’m using filo pastry again and brushing each sheet with melted butter and these go down onto the lemon ricotta. A final scrunch of the edges and it goes into a hot oven until gloriously golden. We then flipped upside down to reveal the upside down courgette and ricotta tart of joy!• 1 box of filo (phyllo) pastry – roughly 10 sheets• Olive oil • Roughly 100g butter - melted• Salt and pepper • Fresh lemon thyme (regular thyme will be lovely)• The zest of one lemon• 2 medium courgettes (zucchini) – thinly sliced with a peeler• 200g Ricotta cheeseYou will need a large baking sheet. (I love my @nordicwareuk sheet from their Naturals range) Line the sheet with baking paper.Pre-heat your oven to 200c / 392fDrizzle the oil onto the paper and then sprinkle over some fresh thyme and salt and pepper. Grate over the zest of half a lemon.Lay the strips of courgettes down the centre of the tray (leaving an edge all the way round), season these strips, then weave further strips of courgettte over and under the first layer. Season again.Dollop the ricotta all over the top, spread it out and season this with salt, pepper and the remaining half of the lemon zest.Roll out your pastry sheets and brush the top one with melted butter. Lay this sheet over the ricotta and courgettes. Repeat with all the filo sheets, then scrunch the edges up to form a rim around the woven vegetables. Brush the top with more butter and bake in the oven for 30 minutes or until gloriously golden on top.Remove from the oven and allow it to stand for 5 mins before placing a board on top and flipping it over.
