Gnocchi & Sweet Potato bowls: - 1 package TJs cauliflower gnocchi - 20ish oz sweet potato (chopped into small chunks) - Salt, pepper, & garlic powder to taste - 1-2 tbsp olive oil - Harvest Apple chicken sausage (or any kind!) - 2-3 cups spinach - Sundried tomatoes (chopped) for topping - Pine nuts (for topping) - Parmesan cheese (for topping) Preheat oven to 400 F. Place gnocchi & sweet potatoes in a bowl & toss with olive oil, salt, pepper, and garlic powder until well coated. Chop chicken sausage into pieces.
