Roasted Cabbage with Chive and Mustard Vinaigrette
Ingredients: ½ medium green cabbage (1-1 1/2 pounds), outer leaves removed 1 tablespoon extra-virgin olive oil ¼ teaspoon salt ¼ teaspoon freshly ground pepper 2 teaspoons Dijon mustard 2 teaspoons white balsamic or white-wine vinegar 1 teaspoon lemon juice ¼ teaspoon freshly ground pepper ⅛ teaspoon salt 3 tablespoons minced fresh chives 2 tablespoons extra-virgin olive oil Instructions: Preheat oven to 450°F. Prepare cabbage: Cut cabbage in half into four wedges and remove the thick core. Drizzle cut sides with olive oil and season with salt and pepper. Roast cabbage: Place wedges flat-side down on a baking sheet and roast for 12 minutes. Flip and roast until browned on both sides, about 8 minutes more. I'm going to bring my mixing bowl over here and we just going to add this in and I'm going to kind of crumple it up when I put it in, alright? I love this easy, delicious. We're making a salad, alright? We're making a delicious, easy salad. Alright. So now y'all to this, we going to add some half a cup of sliced black olives. We're going to add half a cup of sliced grape tomatoes, grape or cherry tomatoes, whatever kind you'd like. We're going to add half a cup of green olives. Alright, we have eight ounces of diced up provolone. It's a lot of cheese. Wow. Alright. Like cheese. This is going to be just cheese. This this salad is called cheese. Alright, we also have here I have some mini pepperonis. So, we're going to do about a half cup of these. So, I'm going to measure. Oops. Alright. We're not going to use this thing though. Half cup of mini pepperonis. Alright, we also have some roasted red pepper about a/ 4 of a cup diced up. We have one can of artichoke hearts quartered I actually cut this a little bit smaller as well we're going to put those right on in alright they just covering everything now look at that alright and then we also have eight ounces of salami I cut em up into fourths I bought the slices so we're going to put that in here as well I'm trying to keep this looking pretty but there's a lot of a lot of stuff here alright put that all around like so okay and then y'all we also have this little mozzarella cheese balls. It's about eight ounces, alright? Uh these are so cute. You see there's one two missing right there. You want to know why y'all? I ate em. That's right. They're just so cute. How can you not eat these? Little cheese balls. Y'all know how I love my cookie balls. So, I like cheese balls too. They're so cute. Alright. Anyways, I'm babbling. Babble and babble. Babble babble. Alright. So, I'm going to eat more. They're so good. Mmm. They're so good y'all. Okay? Mmm. Alright. So, for now, I'll move that to side for one second, alright? So now, we're going to make our dressing. Real easy. We're going to take a quarter cup of olive oil. I have some extra virgin olive oil but y'all can use whatever you'd like. Quarter of a cup. Alright, we're also going to take the juice from one whole lemon. We're going to just squeeze it in here. So, these lemons are nice and juicy. I like that. Don't you hate when you go to the store and you buy some lemons and there's like no juice in em. That makes me angry. Like I want to return it. Like you sold me this lemon with no juice. What am I supposed to do with this? Alright and then, we're going to add some seasoning. So, for this recipe, I like to use Italian seasoning. So, we're going to put about about a tablespoon in or so and good. Alright, then we also going to put in a little bit of kosher salt. Little bit and then a little bit of black pepper. Alright, y'all. So, now, what we're going to do here is mix this up. We're going to mixy mixy with our whisk. I thought that it would be easier to use the whisk for this than my trusty pork and I do have my fork right here. Alright, y'all. Oh, this is great. Look at that. It's nice and thick. I didn't even know that was going to happen. Alright, perfect. So, that's mixed perfectly. So, now we're going to do here. I'm going to bring my salad back and we're going to put this this easy dressing right on top, alright? Right on top. Like so. Bye. And we're going to scrape it all out alright so this is a this is like an antipasto salad alright so y'all can you know you you can customize things however you'd like but yeah this is how I like to do it simple delicious easy hearty so now we gotta give it a mix we gotta mix everything together we gotta try I need a bigger bowl man I buy big bowls and then I'm like I need a bigger bowl every time I buy a bowl it's big and then I need a bigger one like am I just going to have like a giant bowl one day like double this size or something I should okay I'm babbling we're going to mix this up real good y'all I love making this it's delicious it's perfect for summer for spring and I like it because it's hardy y'all you got your meat in here you got some cheese but it's it's still healthy this would be would this be considered keto I think so keto yeah I think so it's healthy there's no carbs no gluten in here right if I'm wrong y'all y'all would tell me but yeah oh my goodness it's a lot of cheese all my provolone over here alright so we're just going to mix this up oh there we go we get all the stuff at the bottom okay My arms hurt. Alright, y'all. Okay. Now, we now we got these cheese balls running away. Get over here. They're like, we don't want you to eat us. Alright, y'all. So, we have this beautiful big bowl. So, now, guess what? We're going to try some but I was just going to eat it out of here but I think I'll serve myself a little bit. Let's see. I'm just going to put some right in this bowl. Let's see. Do I have everything? Did I mix it good? I mixed it pretty good. Alright, y'all. Mmm mmm mmm. Yummy in my tummy. Alright, let's get some of this on top. Alright, y'all. That looks so good.
