1hr 30min · 6 servings Pear Tart Tatin- an irresistible French Classic that is superior in taste to a traditional pear or apple pie in my humble opinion! If you are using a store- bought puff pastry is relatively easy to put together! Ingredients: • 1 Puff Pastry sheet • 6 large pears • 1 cup sugar • 1 stick of butter (1/2 cup) • 2/3 cup water • 1 tsp vanilla bean paste/extract • Vanilla ice-cream is optional but highly recommended Method: • 1. Wash, peel, core and quarter your pears; • 2. To make the caramel pour 1/2 cup water, sugar, butter and vanilla into a pan and cook until you have a dark caramel as you are constantly stirring; add 1/4 cup of water as needed; • 3. Preheat oven to 350 F; • 4. Toss pears into the caramel and arrange them on the pan as shown and

Crème fraîche: • 200 g crème fraîche 38% • 1/2 vanilla bean • 1 tbsp sugar • Serve your Pear tarte tatin with whipped crème fraîche with vanilla.
