This Christmas nibble was so much fun to make! 2 x 200g tubs Hummus 2 tblsp Parsley, finely chopped 1 Lebanese cucumber, chopped 5 Cherry Tomatoes, halved Pomegranate seeds (from half a pomegranate) Fresh Dill leaves EV Olive oil Salt and pepper Place a small bowl in the middle of a large, flat round platter. Scoop hummus on to platter and carefully spread hummus to create the “wreath” base. Then remove bowl. Add parsley, cucumber, tomato, pomegranate seeds and dill on top of hummus. Steam or boil your spinach for 5 minutes until wilted. Remove your spinach from the water, then add to a blender with the rest of your ingredients to make the green goddess sauce.
