Whip egg whites until stiff peak form. While the egg whites are whipping, mix egg yolks and greek yogurt (and sugar if using) then fold in egg whites gently (be careful not to over mix). Pour in a baking dish of choice and bake at 350 F for 1 hour if using a bundt pan or 1 hour and 15 minutes if using a round / square pan.
