These thin sliced pork chops cook up so quickly and are great as a weeknight meal or fry up a bunch and you’ve got a party! 5-6 thin cut bone-in pork chops 1/2 cup cornstarch 1/2 cup flour 4 eggs beaten 1 tbsp garlic salt 1/2 tbsp onion powder Canola oil Salt and pepper 1. Start by cutting slits into edges of pork to prevent curling while frying. Season pork with salt and pepper and spread a little cornstarch over each chop to help tenderize. You can marinate this for half an hour but you don’t have to. Combine flour, cornstarch, garlic salt and onion powder. 2. Heat a shallow amount of oil in frying pan to 350°. Coat pork chops in eggs then dredge in seasoned flour mixture. 3. Fry in oil 2-3 minutes on one side and another 1-2 minutes on the other side. Drain on a cooling rack. Chicken marinade: 1. 2 pounds chicken wings or wingettes 2. 1/4 cup dark soy sauce , 1/4 cup oyster sauce , 3. 1 tablespoons garlic powder, 2 teaspoon cayenne , 1 teaspoon salt and black pepper . 4. 1 heaping tablespoon yellow mustard. 5. 1 egg Flour mix : mix together 1. 1.5 cup all purpose flour 2. 2 tablespoons corn starch 3. 1 teaspoon salt Spicy sauce : 1. 2-3 tablespoons butter 2. 2-3 tablespoons hot oil from frying 3. 2 teaspoons cayenne or spicy chili powder 4. 2 teaspoons paprika 5. 1 teaspoon salt and pepper 1. Dry off the chicken with paper napkin well. The dryer the chicken the crispier it will be. 2. Add all the chicken marinade ingredients and mix well. Set aside. 3. Mix the ingredients for the sauce. 4. Add flour , salt and corn starch to a bowl. dredge the chicken and press in the flour mix and coat well. 5. Add oil to a pan and fry the chicken on medium low heat so that chicken cooks all the way through for 8-10 minutes at least. Fry until you get a nice brown coat. 6. Put chicken out in a wire rack to crisp up. Do not make the sauce until chicken is completely cool and dry otherwise the coating will be moist. We want crispy chicken. 7. In a sauce pan add the butter and hot oil from the fry pan ( it has a lot of flavor ) 8. Warm and melt the butter then add the oil. Turn off the heat. 9. Add the spices and stir. If you keep the heat on it will burn the spices so no heat. 10. Add in the wings and coat. 11. Save Ingredients 1 kg Thighs and drumsticks For the marinade - combine 300ml Buttermilk 2 tbsp Nando’s hot/medium rub 1 tsp Chicken stock powder 2 tbsp Nando’s hot/medium sauce For the coating - combine 11/2 cups Plain flour 1/2 cup Corn flour 1 tsp Baking powder 3 tosp Nando’s hot/medium rub 1 tsp Chicken stock powder 1 tsp Garlic powder 1 tsp Onion granules Method Step 1 - Prep the chicken. In a large bowl, add all of the ingredients for the marinade and stir to combine! Add the chicken pieces to the bowl and let it marinate for at least 3 hours. Remove from the refrigerator 30 minutes prior to cooking Step 2 - In separate bowl, combine all of the ingredients for the coating. Place a piece of chicken into the dry mix and toss to coat well. Now place it on a rack or plate. Continue with the remaining pieces. Step 3 - In a large saucepan/ fryer, on high heat, add enough oil for frying (1 litre does the job). Once the oil reaches 175C/ 350F, place in a piece of chicken, it should sizzle, now add more pieces, making sure not to over crowd the pan. Cook for 6-7 minutes on each side. Do this in batches. Place on a rack or paper towels to drain excess oil. Use a meat thermometer to make sure the chicken is cooked through (internal temperature 75C/165F). Step 4 - Serve with your favourite sides! In a container, combine all of the ingredients (marinade) and give it a good mix. 2. Add in the chicken thigh and make sure that they’re completely covered with the marinade. Let it sit in the fridge overnight or at least 1 hour 3. Then, heat the oil over medium high heat. 4. Sear the marinated chicken skin-side down and let it cook for 4-5 minutes until the skin is golden brown and flip the chicken over. Set aside. 5. Add in the onion and saute for 2-3 minutes. Then, add the chicken back to the pan. 6. Pour in the marinade, chicken stock, and add the bay leaves. 7. Bring this baby to a boil, cover with a lid and simmer for 30 minutes. 8. Lastly, turn up the heat to a medium-high, start reducing the sauce and pouring the sauce all over the chicken for 6 minutes or until it becomes sticky and forms a glazes. 9.
