Rich Hot cocoa (Judy the Elf Style)-  Makes 4-6 servings    Ingredients- 2 cups whole milk (can use 1 or 2% also) 1/3 cup plus 1 Tablespoon confectioners sugar, sifted 1/2 teaspoon sea salt 3 tablespoons unsweetened dark cocoa powder (I used Guittard Cocoa Rouge and I highly recommend), sifted 1 teaspoon vanilla bean paste or extract  185 grams bittersweet or dark chocolate broken into pieces or chips (66% is perfect here, I love Guittard baking wafers)   Steps- Heat the milk in a small pot, just until it begins to simmer.  Whisk in the vanilla bean paste (or extract), sea salt, confectioners sugar and cocoa powder until incorporated on low heat.  Add in the bittersweet chocolate and whisk until it is melted and combined. Let the hot cocoa simmer on low heat, stirring constantly for about 3-4 minutes or until it thickens slightly.  Pour into cups and enjoy!
